Ok so when I was diagnosed my nurse told me I 'have' (emphasis my own) to eat regularly. Now ok I get that my body should have food put into it regularly and quite simply there used to be days when I didn't eat until four in the evening due to how chaotic it was on the wards. However I have now trained myself that to eat breakfast (usually between eight and ten of a morning) and then I usually eat dinner in late evening. Here's the rub my sugars are in pretty good control this way (the app I use right now estimates my hba1c to be 6.6 (down from 6.7) and I have it done again at the end of the month so I see how accurate the estimate is). My point I suppose is this: given the medication etc are two meals enough (and no I'm not generally hungry in between)?

Your nurse has obviously never heard of the 5:2 diet (which has proven pretty useful to type 2s)
or Jason Fung and his Intermittent Fasting regimes (which have proven very effective in reducing medication and weight for type 2s, to the point that some come of medication completely.

Are you on insulin or other strong bg lowering meds (not talking metformin here)? If so, doses obviously need adjusting appropriately, but there is no need to eat all the time if you don't want to.

I think that you have found the ideal way of eating for you @RoseofSharon, some of us (me) have to find ways of not eating every few hours. So long as you are feeling well I think you should carry on as you are doing - it obviously is working

Your nurse will give you the NHS mantra of what to eat.. probably including "slow release" carbs (i.e. carbs) which probably wouldn't do you any good. I ignored the advice I was given on diagnosis and found lots of help here. Eat when you want to or are hungry test your bloods before and a couple of hours after and see how your body reacts. I afraid that your nurse doesn't have your Type 2 diabetes.. you do and only you can help yourself manage it. Our surgery "diabetes" overseer doctor knew less about the condition than I did so I certainly wouldn't take any advice from him.
