Type 1 here and thrive on low carb, moderate protein and higher healthy fats like avocado, olive oil and some nuts/!seeds. I ditched cereals, grains, pasta, rice etc a long time ago. Some will disagreee but I rarely have hypos or need corrections. Works for me but not for all.

Low carb is for me but timing boluses makes a big difference too

Have you been investigated for Gastroparesis? If you think an issue with your digestion is contributing, then get that checked out.

If not, then the first step is a basal, test to make sure your basal insulin is at the correct level.

Once you're sure that's ok, then you can look at your mealtime ratios.

I'm presuming you count carbs and adjust your insulin to match?

Type 1s here eat varying levels of carbs. I eat 180g a day. The key is to get your insulin doses right.

Maybe have a chat with your DSN or Consultant and ask if moving to a insulin pump would help manage your bg levels better, I'm sure I've read on-line (or possibly in the books Think Like a Pancreas or Pumping Insulin) that pumps are often recommended for people who have gastroparesis (if it turns out that you do have the condition).
