But if you want the recipe:
Two big courgettes, peeled and chopped - yes really. They make an amazing apple substitute, it’s the lemon and stewing spices that make it so realistic.
8 frozen blackberries
Some erythritol sweetener - I used about 4 tbsp, but I like it sharp.
2tbsp lemon juice
2tsp Yuzu (if you like sharper apple flavour)
Cinnamon
Nutmeg
Allspice
Boil up until courgette is soft and most of the liquid has boiled off. About 45 minutes, they release a lot of juice. I used a hefty iron casserole Le Creuset type thing, so it could go in the oven as well.
For the crumbly stuff:
30g almond flour
25g hemp hearts/crushed pecans
15g coconut flour
30g erythritol
30g butter/coconut oil
Cinnamon
Mix to a breadcrumb consistency, top the “fruit” and bake until brown, about half an hour in a fairly hot oven, around 180C. @kev-w - shall I add this to the t1 food thread, or is it not carby enough?
Had to do another correction at 1am, so upping the basal again tonight. Once that was dealt with, I’ve been in the 6s ever since. Quiet day today, making bagels, bandanas and hair scarves. And drinking coffee. Oh, and doing some of the online training modules for my first responder thing - all my checks and references have gone through ok, and I’m on the way!

Happy 34 years kevGood morning y'allbetter for me as I've had a flattish line all night, bit low at 4.2 at the lowest but I'll take it. oh and my bolus has only taken 20 mins to start working.
