Type 2 Diabetes cookery class

If you could attend a local cookery class, what would you like it to include?

My name is Farrah and I reversed the symptoms and causes of my pre-diabetes by overhauling my diet (and exercise) using PCRM's (Dr. Neal Barnard) principals: Eating food that is Low Fat & Low GI. This approach worked for me. Diabetes runs in my family and it is an issue that is very close to my heart, my mother now has severe retinopathy. People who know me cannot get over the 'physical' change - I've gone from a UK size 20 to a 10 and when they try my food they cannot believe how it can be so low in fat and still so yummy. Alot of people have told me that they would love to do the same but lack the skills in the kitchen. Others have told me that there is a lack of this kind of service.

And so I'm looking into the possibilities of offering some local cookery classes (within London) - they would of course be low fat (plant-based, low in oils, seeds, nuts and avocadoes) and low GI - all naturally low in calories. I have a knack for being able to turn pretty much anything into a low-fat version - cutting, say, the contents of cake serving from 25g to 5g.

Which is the reason for asking this question, if you were to attend a cookery class, what would you like it to include? And how much would you expect to pay? I intend to start off on a donation basis.

I know this isn't everyones cup of tea but I also know there are lot of people out there curious about this approach championed by the likes of doctors: Joel Fuhrman, Neal Barnard and Gabriel Cousens.

Not being able to eat carbs!
Hi Farrah, i have been playing a bit with the paleo type of diet and i have made a couple of cakes with recipes i found on the internet and my family couldn't believe they were so good and healthier for them. I would love to learn more about this way of cooking with the help of someone to advise me about ingredients and techniques etc. Unfortunately i live abroad so not near you but if there was a reasonably priced cookery course near me i would definitely go.

I too would like some lessons but live too far from you, how about doing a u tube presentation with links to this site.

Yes, google is awash of wonderful recipes isn't it! and decorative ideas! My other favourite is Pinterest.
Ahhh... I'm more of a hands-on kind of person 2christine :)
And if you did have a class close to you, what would you like to learn??
I'm toying with festive/christmas diabetic cookery class .. even for the person who cooks for the diabetic in their life.

hi rainfly i would like to cook bread with no carbs, pancakes, biscuits, and sage and onion stuffing all with no carbs, can it be done. :)

What do you mean by 'no carbs'? :) If you mean gluten free then yes, I've seen many recipes in books and online but myself I don't steer away from carbohydrates, they are my lifeline, my glucose, my energy.. but I do favour low GI 'carbs' to keep me satiated and stable :) but always low in fat recipes and fresh :D (this approach like I said works for me - On another note, I tend to find the gluten free recipes call for added fat: milk, eggs, butter, etc to make up for the lack of gluten - in my experience). I make my own bread for example in a breadmaker that I got second hand on eBay and I only ever use 1 - 2 tablespoons of oil per loaf. And I favour stone ground wholewheat if my budget permits :) So the bread is: low in fat and low GI.

Hi Catherinecherub, I have been mindful to read the terms and conditions of this forum and that is why I did not mention the coaching service that I have just launched in London as I am already in email communication with this website with regards to potentially paying for advertisement and hence why I am not advertising that service on this forum as that would be a breach of their t&cs. This post about cooking classes is a seperate idea that I am toying with and the reason why I've posted it on here to see people's opinions - good idea, bad idea, needed, not needed, theory, practical, etc..and I have made it clear that I would be starting this out on a donation-only basis to cover costs. I hope that clears up any misunderstanding,thank you, Farrah

thank you for your answer,i did mean no carbs but I suppose I must have some lol. I like to make my own bread using spelt flower and honey ,one slice a day cut very thin was all I ever ate, i do miss it.

Hmmmm :) sounds yummy! And yes, you must :) They are our friends as long as they are low GI :) and a knock on bonus (if you combine that with low fat) makes your diet naturally low in calories.

(Dr Neal Barnard's book on diabetes (have you read it? or seen PCRMs website section on Diabetes) cognitively changed my outlook on carbs, I used to fear them thanks to all the bad press they get. When infact, the right ones are sooo good for us, I had been following a gluten free/low carb diet and wondered why I was even more tired then before.)
