Low carb coconut ‘porridge’ is delicious, that’s what it is! I’ve been eating it every morning with strawberries and cream since August and never tire of it! The recipe says a pinch of psyllium but I put in a quarter of a teaspoon in and it doesn’t affect the taste. Here’s the recipe:
It’s funny you should say that, I wasn’t keen on coconut pre low carbing, but along with sweet peppers I’ve developed a taste for it!Thank you Rachox and Jemz for your nice comments. Unfortunately coconut and it's products are a food that I really dislike! I have tried them, but hate the taste. What about nuts? I'll try the flaxseed I think.

Just chuck all the ingredients in a non stick saucepan and stir over a low heat til it reaches your desired consistency.
Prednisone is constipating - paper insert advises. I think it tends to come on after a little while. As you have pre-existing bowel problems, you're well advised to seek advice from your health care professional before self treating.I'm T2 on humulin M3 twice daily, my bgs are a bit up at present due to being on Prednisolone (8 week course) for bowel problems. I also have stage 4 CKD. I went on the LCHF diet at the beginning of January and have lost over a stone so far - I do have quite a lot to lose. What I'm a little worried about is that my bowels were working fine to begin with, but I'm getting constipated now. I don't understand this, as I've never eaten so many vegetables in my life! I eat a lot of brocolli, cauliflower, courgettes, swede, with protein - mostly chicken or oily fish, cheddar cheese, and am eating butter, using olive oil for cooking. I have totally cut out bread, potatoes, rice and pasta. I have an occasional avocado. I have been to see my renal nutrionalist since starting the diet, and she fully approves, and is going to keep me monitored, which is great. Should I add something to help my bowels though please?

Nuts or peanut butter is a great source of cheaper fibre. Have you tried chia seeds? They have lots of fibre and good fats, they also absorb a lot of fluid so swell in the bowel and make things move along nicely.
