Update on my Journey

Hi

I posted a few weeks back when in the shock of being diagnosed T2 with a reading of 91, I've also high blood pressure I'm having treatment for.

Having got over the shock and feeling sorry for myself with the help of my amazing wife Ive adopted a Keto way of eating, more what I call lazy Keto as it's referred to.

I'm lucky as my wife is a very good good and has her own cake business but I feel what I'm doing people can achieve.

We've invested in lots of different ingredients ,Almond Flour, Xantium Gum but typically I feel I'm eating low carb but without missing out to much .

Typically I'm consuming 35-45g of net carbs a day , we weigh all my food , analyse ingredients and research recipes.

As an example my breakfast choices are
Bacon sandwich (1 slice of wife made bread 3g of carb) Keto Granola Home made with Almond Milk (3.8 carbs per meal)

Lunch Keto Soups or a cold meat sandwich.

Drinks I now have unsweetened Almond milk in my tea and coffee, or I have a iced coffee using heavy cream , sweetner using erythritol

Dinner lots of choices , steaks or pork , Chicken with low carb veg , I green , sprouts, cabbages, beans . Sausage ie 97% meat . Chili no beans but using Carbzoneuk rice (5g carb per portion) Spag Bol using Carbzoneuk pasta (5g Carb) or carb free Konjac Noodles. Wife makes me a low carb gravy to.

Toad in the hole using wife's keto (arrow root flour and cream recipes) Mash is now Cauliflower Mash .
We cook stir Frys using avocado oil and the low carb rice . We experiment with keto recipes so for example we swapped flour and used protein powder to make our own KFC. I have pies but a Keto pastry made from cheese. Headbangers website has some good recipes.

You can improvise to, Corned beef Hash was great , we swapped potatoes for raddish , no difference at all

Treats wife makes a avocado mouse for me with 4g net Carbs, I have 85%-90% dark chocolate 25-30g at a time, pork scratching and chicken bites. A few glasses of wine at a weekend or Michelob Ultra Beer.

Eating out has been a big challenge we did that a lot , I still do this but il speak to a café owner and for example last week I had the full English, I don't eat eggs so I had a plate of quality sausage, bacon, mushroom, a bit of black pudding which is high carb and a tablespoon of beans again high carbs. I went for an Indian I had the tandoori has a bit of the wife's rice and a popadom. I had fish and chips over Xmas.

Exercise and drinking 2L of water a day is helping I try to walk most days looking to get at least 6000 steps in. In terms of results I'm down 14 pounds in weight in a month and feel better. I still have my moments usually after going to the supermarket, I miss proper pies, sausage rolls crisps, chippy team.

My 3 month review is April 6 when il find out what if anything this lifestyle change has brought. I still intend to live once I've stabilised my levels so occasionally a fish and chip supper, a Sausage roll, Indian with rice , I need to have something to look forward to , we all do.

In the meantime if I can offer any tips just don't give up , if you have a partner get them to buy into your way of eating, honestly through research you can replicate many foods low carbs it just takes a bit of trial and error.

We're still learning and some things are hard to get your head around such as knowing cream is better than milk for me.

I just hope when I go back to the Nurse I've achieved something. My only negative at the minute is getting the timing right on my slow release Metaphomin, if I have a late breakfast say 11 then take my meds then again at dinner at 6 I get a bit of a Dodgy tummy, whereas a 8am breakfast and meds I'm a lot better m

Can I ask why as the Granola his homemade with very carefully selected ingredients with a total Carbs of 3.8g a serving plus it's giving me good fat my diabetic nurse said it's good to have , so please explain to me why you think this?

Nutritionally empty carbs that won't be doing your bloods any favours.

Have bacon and eggs instead or skip breakfast completely and extend your overnight fast.. replace with a nice coffee with double cream.
 
Well done @Blade72 , and wife! Nice to see the partner praised.

Although I am the wife and the type 2 in our family, husband's support and adapting to (mostly) low carb has helped tremendously

So what about the good fats then that are in the Granola , no offence you dont know what's is in it . My wife uses carefully selected nuts and coconut I can't eat eggs . It's not shop bought Cereal's.

In terms of the coffee when would you suggest I have this as I'm finding il.take my first slow release meds with breakfast/lunch at 11-11.30 next meal is 6 but my stomach from the Meds is bad compared to having 3 meals a day starting with a 8am breakfast and meds

I made a decision early on after 3 weeks of being tied to the loo with metformin to throw them in the bin and adopt a keto diet (usually less than 20g of carbs per day) . That and intermittent fasting.. no breakfast just coffee with cream don't eat until after 12 noon at the earliest was what helped me the most put T2 into remission.

If you are going for a 20g or fewer carb day then granola is not what I'd eat first thing when most people are quite sensitive to carbs.

What does your blood sugar do after the granola?

You're doing amazing!
Going close to zero carbs, like bulkbiker does, isn't necessary for most. It all comes down to personal preference, we have multiple members who prefer a low carb granola type of breakfast over coffee and cream or bacon and eggs, and that's perfectly fine.

Hi Blade72. Your efforts and approach are to be applauded particularly as you are working hard to adapt the foods that you like to eat.

I'd strongly suggest ignoring the nurse (I often do) and getting a meter then you'll be able to see what each food type does to your blood glucose levels and adjust your diet accordingly. You might be able to "get away" with your granola, alternatively it could give you a nasty spike. Without checking you'll never know.
Your nurse won't have recommended one because most GP's can't or won't pay for it.
For a small investment you will gain a huge amount of knowledge about how your body works.

Why would you expect a meal of less than 4 grams of carbs to cause a spike?
 
Hi @Blade72 well done on changing your diet and like @MrsA2 I'm the wife with a supportive husband.

I agree that a meter is a great idea. You can use a meter to find out how different foods affect you. This gives you the information to make choices about the levels of carbs you eat and when. Some people can see great results on 100 grams of carbs a day- others need to go a lot lower. The other thing is that it needs to. be sustainable. In my opinion it is unlikely you will ever be able to go back to a very high carb diet which is seen as normal nowadays. That's not to say it can't happen but I don't think that's the usual outcome.

@Blade72 that is a truly inspiring story in so many ways : the complete dietary overhaul and the amazing support you've had from your wife. Please give her heartfelt congratulations from me.

I second the meter recommendations, as it will give you support in knowing what's working. AS @VashtiB already said, some T2s can get away with a lowish carb lifestyle of 100g a day while others need to go full keto like @bulkbiker, you won't know where you lie on the line without a meter. Many T2s just use a meter while they are sorting their diet out and then don't use it as much later.

Remember that while low carb has worked amazingly well for many members of this forum, there are many different food choices that you can make while choosing low carb. We have vegetarian and even vegan low carbers (though I've got to say that vegans have quite a restricted choice of food available). Nothing wrong with choosing almond milk over cream if that's what you prefer, IMO.
