Increase in Blood Sugar Levels could be caused by a variety of things - Stress, Adrenalin, Caffeine, High Carb Meal etc - but what I find somewhat strange is their comment "if my bloods ever rise to over 6 they'll consider putting me on insulin". Non diabetes people have BGs that fluctuate all the time - there is nothing abnormal about that. Where diabetics differ is the fact that our fluctuation is often much greater. If you were say between 6 - 8 a couple of hours after eating a meal - with no meds - In My Opinion - nothing to worry about. If you were fasting for 8 hours and your BGs were between 6 - 8 there would be some cause for concern I suspect.
Be careful - you might be a round peg that they are trying to fit in a square hole or is it a square peg in to a round hole ... Lol
