Here's a list of the fibre contents of various foods from high to low. http://www.smcs.nhs.uk/files/patient-information/neuro-physiotherapy-diet.pdf
You can also just put the name of an item and fibre on google search to get the fibre for an individual item eg.
broccoli fibre = 2.6g per hundred gram
courgette fibre= 1g per hundred
Veg aren't that high in fibre compared with pulses though so you have to eat quite a lot of them to get near to recommended amounts.
Some people find that moderate portions of pulses don't spike their blood glucose. Most pulses are very low GI. One of them chana dhal, a type of immature chickpea has a very very low GI. (chickpeas have according to google search 17g of fibre per 100 grams)
(for Chana Dahl see this article about chana dahl and one T2 bloggers experience http://www.mendosa.com/chanadal.html )
