Vegetarian and diabetic

What are some of the best foods to eat being vegetarian? What are the things I need to avoid the most?

As you've posted in the Newly Diagnosed section I suppose you're newly diagnosed with diabetes. Are you on any medication or insulin for this?

Dietary advice is different depending on what type of diabetes you have and what medications you use. If you're not on medication, or on metformin only you can safely avoid all foods with lots of carbs, which helps a lot with type 2 diabetes.
 
The vegetarian subforum will be best, but just remember that carbs are the main thing to avoid, so fruit is generally the worst, carb-wise. Berries are ok in moderation but tropical fruit and bananas are problematic. Leafy greens and 'above-ground' vegetables are generally great- very healthy. Cabbage, salad, broccoli, cauliflower- all excellent. Root veg like carrots isn't so good. Corn is very carby, potatoes are very carby, onions are pretty carby although you tend to only have a little onion at a time. Pulses and beans, surprisingly, are actually pretty bad too. Grains and anything made of grains tends to be problematic. Pumpkin type veg, gourds and squash etc are pretty high carb. Still, there's loads of good leafy green options, and things like runner-beans and string beans are good. If you can have eggs, they are very good, full-fat hard cheese is generally very good. Milk is pretty bad, with skimmed milk being the worst, and double cream being pretty ok.

Now obviously everybody reacts differently, and you may be able to tolerate some of the more carby foods quite well- some people spike from tomatoes, but they seem ok for me, for example. I would just suggest that in general, the main guiding principle for T2 is to avoid carbs. The more carbs in the food, the more care you should take.
 
I don't think they are, butternut squash and courgettes in particular are low carb and ideal for a vegetarian.
Yes, ok: I forgot courgettes are good, and if you have better info on squash than I was going by, then that's all to the good. Thanks for the correction. The more vegetable options the better! I also forgot to mention aubergine, which I guess is a good versatile option.
 
A lot of the meat alternative products are low carb like the quorn pieces, fillets and the deli slices, ham etc. I also have the Linda McCartney sausages and they are 1g carb each. I'm a veggie and when I was first diagnosed I thought I wouldn't be able to eat hardly anything as all I ate was carbs but it's not been too bad really.
The breaded products tend to be more high in carbs. I eat a lot of eggs and cheese as well.

You've already been directed to the vegetarian part of the forum. If you want specific advice you will need to give some more information. When were you diagnosed, what type of diabetes do you have, do you have weight you want to lose, are you on any medication.

If you are a type 2- do you have a meter? I think that is a great place to start.
