vegetarian and vegan low carbers

My label reading activities now include the carb content and I have been comparing the different carb contents of cottage cheese and realising that all cottage cheese is not the same. I buy the higher fat version and my favorite is Longley Farm, but the M&S one has added creme fraiche and has a slightly higher carb content... anyway, this is what I do with it.

I'm usually a bit vague with the quantities when I make stuff (drives my mother mad, she likes definitie quantities), if I have a large tub of cottage cheese - say 150-200g - I tend to add the whole avocado and more of everything else.

a tub of cottage cheese - around 100g
x3 spring onions, shopped (depending on size, sometimes more sometimes less)
6 cherry tomatos, halved
1/2 avocado, diced
generous spoonful of Pataks lime pickle - with the lime chopped up small

mix it all up together, serve with a leafy green salad, eat
in the distant days when I ate bread I used to stuff this in to pitta pockets
