I have a confession... I've never eaten Parmesan! I find the smell overpowering, so can't face it, even in the "pretend" vegetarian versions.
So, I may give @Avocado Sevenfold's version a try if I can find some nooch (should be available at Unicorn, my local vegan grocer/deli).
I think I read on another thread that you are up for trying new dishes this year? I like to look at the Foodgawker site each day and look for ideas or dishes that can be adapted. We have had some lovely recipes from there.

Back to work todayso took a bowl packed with anything nice I could find in the fridge to give me the will to live until lunchtime. It was a mish-mash of leaves, cold risotto, "parmesan," hummus, tomatoes, cucumber, olives, spicy seitan, sriracha mayo. It hit the spot.
That's it I am craving salad for tomorrow, always at this time of year .. something lightB: golden milk

Oh I like a bit of food porn! I have landed on Yummly before when googling but didn't realise it had all those filters. Thanks for the heads upAvo - Have you explored www.yummly.com ? You can use it without signing up, and can filter by big things (like vegetarian) and small things - like "no almonds" < just an example. It has filter check box options of low car, no sugar, honey, flour, gluten, plus the option to type in your own dislikes/intolerances. You can also state preferences for cuisine styleeee (Indian, med or whatever), and levels of spiciness. I love it, and think I just about have my filters set about right for me.

We are not really organised and usually end up eating the same thing for days! I have been trying to stay awake this evening until bedtime by cooking. I have tomorrow's salad prepared for lunch ready to grab in the morning. I have also made mushroom stroganoff and turnip mash that I can just microwave tomorrow evening. I wasn't organised today, but I was lazy/tired after work, so I made a quick meal by stirring in some "Philadelphia light cheese with chives" into cooked pasta and then adding some mixed beans and seasoning.
It turned out to be quite tasty - no good for LCHF/vegans though.
I must do this as well ..Is it worth getting sprial gadget .. I always just roast my cauliflower or chop up in a rustic way and stir fry .. not a big gadget person ..Challenge accepted! Courgetti and cauliflower cream sauce with beans and chives? Sounds delish. Must give it a go.
