Vegetarians: What have you eaten today?

I love Scotland I love Edinburgh and some remote islands ..
I was not born here though .. just been here for the last thirty years ..
I will put Glasgow on my list lol xxx
Glasgow and Edinburgh are very good for veggie living. Lots of veg*n shops and restaurants. When I went to the recent Vegfest exhibition, it was really busy :)

I have a confession... I've never eaten Parmesan! I find the smell overpowering, so can't face it, even in the "pretend" vegetarian versions.

So, I may give @Avocado Sevenfold's version a try if I can find some nooch (should be available at Unicorn, my local vegan grocer/deli).

I lived and worked in Edinburgh (went to Uni there too) and I know Glasgow reasonably well, but it was 20 yrs ago.

I've been to Norfolk broads on holiday once - unfortunately, I remember the rain being worse than Manchester!
 
Back to the grind today and the house is empty We took all the decorations down too, so Christmas is officially over!

Food back to normal i.e. boring:

B: Muesli.

L: Hummus sandwich and popcorn.

D: Lentil spag bol. Satsumas (a little Xmassy)

Snacks: Almonds plus some fancy chocs that were going around the office!

Good idea for sprinkling extra calories and B12 on your food. I hope you like it. Don't eat it out the bowl and say it is horrible though as it tastes better on something. Good luck.

Back to work today :bored: so took a bowl packed with anything nice I could find in the fridge to give me the will to live until lunchtime. It was a mish-mash of leaves, cold risotto, "parmesan," hummus, tomatoes, cucumber, olives, spicy seitan, sriracha mayo. It hit the spot.
 
I think I read on another thread that you are up for trying new dishes this year? I like to look at the Foodgawker site each day and look for ideas or dishes that can be adapted. We have had some lovely recipes from there.

Avo - Have you explored www.yummly.com ? You can use it without signing up, and can filter by big things (like vegetarian) and small things - like "no almonds" < just an example. It has filter check box options of low car, no sugar, honey, flour, gluten, plus the option to type in your own dislikes/intolerances. You can also state preferences for cuisine styleeee (Indian, med or whatever), and levels of spiciness. I love it, and think I just about have my filters set about right for me.

It's another food porn site!

Jamie Oliver (I'm not a great fan), says to treat Parmesan as a seasoning, rather than consider it on it's own. @Ledzeptt - I'm with you on the smell of it,................ yuck, yuck, yuck.

That's it I am craving salad for tomorrow, always at this time of year .. something light
And I have the soup I made in a jug in the fridge . That's tomorrow sorted .. # feeling inspired lol

Oh I like a bit of food porn! I have landed on Yummly before when googling but didn't realise it had all those filters. Thanks for the heads up :D

We are not really organised and usually end up eating the same thing for days! I have been trying to stay awake this evening until bedtime by cooking. I have tomorrow's salad prepared for lunch ready to grab in the morning. I have also made mushroom stroganoff and turnip mash that I can just microwave tomorrow evening. Bit of a random combo lol

That's it , when I had to be organised for many years I made a great effort ..
Now I don't have to be organised I am more relaxed .. that must be the answer ..
I have days when it's the same thing .. but I did have the salad today x
 
I wasn't organised today, but I was lazy/tired after work, so I made a quick meal by stirring in some "Philadelphia light cheese with chives" into cooked pasta and then adding some mixed beans and seasoning.

It turned out to be quite tasty - no good for LCHF/vegans though.
 
B: Muesli with Skyr.

L: Potato waffles, LM sausages, beans, fried eggs & mushrooms.

D: Shepherd's pie made with quorn.

Still snacking on Christmas leftovers as my un-diet progresses (it's going well: gaining weight for a change!).

Today ..
No added sugar Alpen

My chesse roll and a pear ..

Tonight .. I have made , sambar , lentils with okra ..and lovely long beans cooked in turmeric and coconut ..
I love this meal , enough for today and tomorrow.. :)
I admit not to doing all the coking , I had help .. you know many hands make light work ...etc

A little bit of chocolate fridge cake later .. I used 90% Lindt so pleased with that .. I added flaked almonds ..
And by chance I found a bottle of hazelnut syrup in TKM ,sugar free , actually , you find the odd thing in there ..
And it tastes good x

Have a nice Sunday veggie club .. :)

I must do this as well ..Is it worth getting sprial gadget .. I always just roast my cauliflower or chop up in a rustic way and stir fry .. not a big gadget person ..
