Vegetarians: What have you eaten today?

Hi @Sable_Jan That looks amazing. I saw a yellow sticker celeriac in Tesco today for 39p and didn't buy it because I'm an idiot!

I am baking an almond feta at the moment. I fancy snacky food tonight so having almond feta, Lidl roll soldiers, sun dried tomatoes, olives, peanuts and red wine.
 
You missed out on a bargain there....
I love feta. How do you make your bake?

lol I didn't drain mine overnight and it didn't make any difference. Just a couple of hours to let the flavours meld. The first time I drained it overnight, no fluid came out! I felt conned.
 

Avo - It won't impact you, but there's a study starting later in the year into the impact of a vegan diet on T2. It's not a low-carb vegan diet, so I'll be fascinated to see how that goes.

Oh that will be interesting! Thanks for the info. My uneducated 2p reckons that removing inflammation caused by dairy must have helped my own diabetes as not much else changed in my way of eating. Maybe switching from eggs to almond milk for breakfast? It is so low carb/calorie that it might count as accidental 16:8. Whatever happened, I am really enjoying these wee bonuses from veganism

Over half a million vegans in the UK. Maybe they are dodging the beetus? I hope that's the explanation for her recruitment problem

Recruitment is always a bit of an issue, as quite clearly they're looking for a fairly specific starting point, which might be T2/T1, overweight, no complications or significant co-morbidities, usually an age range and so on it goes.

Some of the trials/studies are paid, although the one I refer to only reimburses incurred expenses, such as travel.

There's someone in my local DUK group who has done a couple of cardiac prevention trials; not for the expenses, but because he received a fabulous health screening at the beginning and end, including MRI scans and all sorts. His view is it's saved him a skip load of cash, not going to BUPA for the checks, and family members had cardiac disease.

Erm,............ To stay on track with the thread; I haven't had much yet today, but have had a vat of yoghurt for my brekkers. That'll qualify me on the meat-free front. Phew!

Lunch well a heather type of roll , usual cheese and tomato to yet be eaten

Tonight , and cooked for me yum ..
It will be a Samber curry with okra , lentils, in a coconut sauce ..

And a side dish of long green beans cooked in turmeric and coconut ..
A little rice ..and enough for two days x
