Vegetarians: What have you eaten today?

I've received my blood test results:

Cholesterol slightly worse than last year (not a surprise based on my high calorie diet and lack of exercise due to illness):

HDL 1.0
LDL 3.8
Total/HDL 5.3

Hba1c 41 - this is down by 1 (which is a surprise given how ill/inflamed I've been over the past 3 months), so happy with that.
Those are brilliant results .. well done , nice to have good news .. you got a 41 :)
I have now have had 38 followerd by two 40's I do portion control diet and vary it from time to time

Today .. was the aubergine curry from the fridge ..
It seems I cooked it without the curry spices ..:joyful:
I think I was cooking to many dishes at once ..and took a bit of a coffee break :)
A rather long coffee break :rolleyes:

B: Porridge

L: Egg & beans on toast

D: Quorn fillet provencale with lentils & quinoa (the sauce was basically chopped toms with peppers, but tasty)

I've made "Jamie's granola dust" for breakfast. Very easy and a quick taste means I'm looking forward to tomorrow's breakfast. I know all the ingredients are high quality and there's no added sugar, but it's worked out to be twice the price of any commercial cereal!

Today:

B: Porridge

L: Egg & beans on toast

D: Quorn fillet provencale with lentils & quinoa (the sauce was basically chopped toms with peppers, but tasty)

I've made "Jamie's granola dust" for breakfast. Very easy and a quick taste means I'm looking forward to tomorrow's breakfast. I know all the ingredients are high quality and there's no added sugar, but it's worked out to be twice the price of any commercial cereal!
Yes expensive all these diets ..

I think I was so busy cooking the cauliflower cheese and making the soup , I missed the spices out ..
I will make up for it tomorrow, as tom still ate it .. I am so lucky x
Think it might be a chilli tomorrow

This is a veggie nightmare ..

I have made a lovely chilli for tonight ..
Even added the juice of a fresh lemon , before they become extinct xxx :woot:
 
@Ledzeptt Congratulations on your blood results and your haul of courgettes! My daughter managed to get me a bag of frozen courgettes in Morrisons last night as I am craving a load of roasted Mediterranean veg. Hope the frozen stuff doesn't go weird in the oven.

Might be going out for dinner tonight. I have just made @Kat100's fridge cake for later. First attempt. So far so good.

I'm still having golden milk every day; tend to have it before going to bed.
 
Yesterday

B: glass of almond milk and two big strawberries (was running late for work)

L: Lidl toast and hummus

D: went to Nando's for the first time. Had a veggie burger without mayo. I wasn't tempted by the white roll it came in - I think I am hard wired now to not eat white bread. Same can't be said for chips though! Lovely sprinkled with peri-peri seasoning. Ooops! I didn't test afterwards, but was 6.1 this morning so not worried. Kat's fridge cake is delicious!

I am hankering for Mediterranean veg so much at the moment. Must be all those news stories. Planning to roast a pile of random veg tonight :hungry:

Today they had courgettes in Tesco .. no limit .. @Avocado Sevenfold
Enjoy the fridge cake .. hope it works out for you , it's lasting me a week these days , but I do have a few good chunks everyday
We will have to set up veggies by mail to each other if this problem continues ..:cool:

I love adding different things now , cinnamon and other flavours etc xxx
Same ,I do eat bread but not white bread , chips I am afraid to say ....yum yum yum x :)
So you had the chips and not the bread , now I call that reducing carbs , brill x

I forgot the cinnamon :facepalm: Coconut, hazelnuts, pecans, sunflower seeds, vanilla, rum, orange zest, chilli flakes and a few fresh cherries. I can guarantee it wont last a week :hilarious:

It's just the high % chocolate, peanut butter and coconut oil .. they are the core ingredients..
Goodness yours is Posh lol :angelic:
I mainly do almond and coconut flakes , but now I have to think of other ideas lol x :D
