So I didn't come down that fast. I will test again after having the leftovers for lunch today.

I saw a lasagne recipe recently and they used hummus for the sauce so that might work. Creamed cashews are also good for creaminess. I suppose it depends on the dish. Do you have one in mind?I really enjoyed it. Her blog has a few interesting meals I want to try.

Tapioca starch/flour makes cashew cream stretchy like cheese. It is quite carby, but you only need a little. I used it recently when I made a lasagne.We have Cashew and Almound milk here Maybe that would be a short cut instead of making my own. And I'll just find a way to thicken it.

I'm baking Charlotte spuds and cooking red cabbage for the first time. I'm going to try it as it is with just a touch of black pepper and lots of butter....Cauliflower cheese and carrots, parsnips roasties with two little new potatoes I like those roasted ..
