Vegetarians: What have you eaten today?

Has anyone made a courgette and chovolate cake .. just wondering I read about it somewhere
Sorry Kat, I have not tried it. Might be a modification too far for me without flour, sugar and eggs. I best stick to courgetti and a bit of chocolate instead lol Let us know how you get on if you find a recipe :)

I have given up looking for a suitable pancake recipe so will just steal a bit of my kids' wheat flour ones tomorrow.

Made with that protein mix .. fruit and sweetener of choice ..x
They did use bananas x I have not tried the protein mix yet .. I might later in the year x

I quite fancied a savoury pancake made with chickpea flour, but my stupid Tesco has stopped selling it o_O

My girl makes them with wheat flour, egg replacer and soya milk. They look like real pancakes and can't be too bad because even my fussy boy will eat them. I think I'll have one of those. It's a good job there are no carbs or calories in food stolen from a child :angelic:
 
Today

B: golden milk

L: spinach leaves, hummus, mixed seeds, Tesco toast

D: waiting on spicy Spanish-y roast veg and LM sausage concoction with cauli mash :hungry:
 
Horribly high sugar level after work today. I think I've started becoming too reliant on wheat again, and I obviously cannot cope with it at all. I'd had a Lidl roll with peri peri hummus for breakfast, but then for lunch tried a few of the new carrot, turmeric & chia mini breadsticks at work with some garlic & herb sheese. It was obviously a gluten overload step too far!

So it's salad for dinner. Here's my walnut, grape & sprouted seed salad. I've got some Tofurky barbecue chickn pieces to go with it, and some of the Bute greek style sheese. The tofurky pieces aren't great at 13g per 100, but I just fancied a change. I'll just have to ration myself to a few bits and leave most of the grapes for hubby :)

Oh and @Avocado Sevenfold my favourite tofu is the Taifun Japanese style fillets. I've tried the wild garlic and the black forest ones, but not the pizza flavour. I shall check them out !

Those Taifuns sound exotic. Will keep an eye out for them.

Grapes can be quite high carb as they are so moreish. Shame really as they are fab.
 
The forum didn't like my photo! Said it was too big. I'll give it another go. Last night's salad, followed by this morning's seed porridge. It was really good! The original recipe had salt, but I was always a masses of golden syrup gal, so I added a tsp of raw cacao powder, and with the few strawbs too it was easily sweet enough. And it carries on thickening as it cools, so I thought it was way too runny at first, but it ended up just right.
Oh, and I definitely do not recommend that Tofurky Chick'n. Maybe it's the American sweet tooth, or maybe I'm just not used to sugar any more, but it was just way, way too sweet. Their tempeh bacon's the same, ruined by loads of added maple syrup.

@PurpleArmadillo Looks yummy. I could just eat those grapes off my monitor! :hungry:

I think our taste buds do change. I have just had cold leftover roast veg and the red peppers and shallots were like sweeties.

We ended up going for a vegan one made with wheat flour. It was wafer thin so more of a crepe, honest. With a blob of lemon curd, strawberries and ginger granola. Best pancake day ever lol

Breakfast was usual Greek yogurt, spoon of preserve and handful of granola/muesli mix.
Dinner was needs-using-up stir-fry....
Leftover cooked carrots, wrinkly red pepper and had to peel it courgette...fried til nicely browned, sprinkled with oregano and salt and topped with trim the dry bits off slices of Edam...allowed to soften, flipped until brown and it looked like this

And tasted lovely....just shows, looks aren't everything
