Vegetarians: What have you eaten today?


I do a 'gentler' version of the 16:8 Avocado - I have a couple of coffees with cream to keep me functioning/human & it still made a difference to my BG

Did a 20:4 a couple of days ago - that was tough - but I love an experiment (or exercise in self flagellation!?) so I'm trying it again today.

D: Coconut/psyllium flatbread with avocado/tempeh bacon/asparagus/mayo
 
Thanks, this is something I might consider later. I am still doing my "double cream free January" thing. So far so good.
 
That sounds delicious. The first time I tried the recipe, I roasted the tomatoes. Now I just use sun-dried ones from a jar as I am lazy.
 
Today.

B: 2 slices Hovis Wheatgerm toasted with butter.
L: Pack of Noodles with vegetable pox.
D: Vegetable Lasagne and Garlic Bread (4 circular slices).

L: avocado, cheddar and chilli flakes. Soya decaf with coconut oil
D: leftover aubergine and mushroom moussaka. 85% choc

Must try that moussaka when the weather cools down here - another way to incorporate mushrooms

L: 3 x small low carb okonomiyaki - recipe experiment (posted the recipe in the veg recipe thread for anyone interested)
D: more okonomiyaki (experiment a success ) with avocado/wasabi/mayo & some ginger/garlic/chilli egg drop soup
 
I forgot about okonomiyaki I loved it there is a egg free one that I made and my husband enjoyed! I find chickpea flour too sends my Bg too high http://www.veganricha.com/2015/03/vegan-okonomiyaki-cabbage-carrot-pancakes.html

Ok l am really liking this remission thing

L .. Biscuits and cheese .. Fresh cream apple turnover .. Naughty I know but they were reduced in price .. And the wife likes them
D .. Jacket potato on a bed of Spring greens

All sugars reading well .. nothing over 7.0 after 2hrs ...

My partner has come home and brought me a slice of shop bought
Carrot Cake. Going to FORCE myself to eat it.
 
B: full fat yogurt, flax seed, spoon flu of NAS peanut butter
L: home made vegetable soup (leftovers - mainly cauliflower), square of 80% dark chocolate
D: mixed vegetable omelette (cauliflower, green beans, plus tiny amount of carrots and peas)

L: quark, berries, walnuts, coconut, cinnamon. Soya decaf with coconut oil
D: peanuts. I know I said I wouldn't but feeling **** today and they hit the spot

L: mushroom pate on almond bread & some leftover chipotle/lime coleslaw (not one of the great combinations!)
D: fathead pizza topped with kalamata olives/pickled jalapenos/capsicum/onion

Thank you, yes I am still a bit amazed that I can eat this and not send my blood sugars in to outer orbit
I was found very early with my T2 so expect that helped .. Told all the wrong advice that I followed for three months ... Pushing my blood sugars in to orbit .. Then about 2 years ago went quite low carb ... Around 20 to 30g of carbs a day .... Yes at first it was hard ... But some of my extra weight dropped away (I lost 5st in 18 months) got my health back, heart problems have reduced and I stopped taking statins (not recommended without the help of the heart nurse who monitored me closely in the withdrawal time from the statins)
I still eat almost low carb ..and high fat .. But as a treat I can have a treat now of carbs .. I don't want to put on the weight again as I still have 2 st to loose and my weight has been stable for a few months now.
I still feel it cannot be real .. Eating carbs and not going over the normal blood sugar levels .. Last night after a big chocolate covered ice cream I only went up to 6.0 .. 2 hours after eating ... Confirmed by using three different meters !!!!!! Pinch me .. As it feels like I have a achieved the impossible.

I found when I increased ..yes increased my fat intake ..olive oil and coconut oils... My weight reduced faster hope this helps

Edit to add .... The wife says no food is off limits .. But I can only have the quantity that the carb counting allows ... When I first went low carb I wanted a chease and onion pasty... I got my wish ..but I only had a fith of the pasty and a fresh salard ... So after that I refrained from wanting high carb foods !

7pm: 1 small Custard Tart.
