Do you mean to ask how we like our bbq venison steak best, or are you wondering about preparing venison steak in light of diabetes?

Personally, if I could get hold of a venison steak, I'd likely look up 50 recipes on Google first, and then discard them all and just use salt and pepper and put it on the bbq until done.
Maybe I'd make some fresh garlic butter to go with it.

It will be far more tender and juicy if cooked in a tray at the edge of the heat, or in a cast iron pan. I think lamb fat is the best one, but beef fat will do. It will become dry if it gets too hot and everything boils away. If you can put on a lid and leave it for ten minutes, warm and cosy in its own steam, it will be even better.

Venison is very like beef so depends on the cut, I use loin for frying/grilling. I like it medium rare, marinade it in a splash of red wine, crushed garlic, dash of soy or Worcestershire sauce and if you have some fresh herbs throw them in, small squeeze of lemon, salt & pepper

Get your grill red hot so that it sears your steak quickly, venison goes tough quickly so has to be cooked high and fast. Take out of the marinade and drain but don’t dry, brush your grill with ghee to stop it sticking 3 minute’s either side for med rare, 4minutes for medium and 5- 6 for well done - though I wouldn’t recommend well done as it can get tough. Let it rest for 4- 5 minutes before serving

It’s a very lean meat so maybe make a sauce or flavoured butter to melt on it to up the fats for satiety. I like a chilli and garlic butter.
