Very little change post prandial, feedback?

Been testing for 3 weeks now (with a 3 week holiday in the middle), but becoming confused by a lack of movement post-prandial.

For example, yesterday ate the 15 carbs for breakfast, and 35 for lunch.

Then tested before eating, 6.7 (Which I thought was too high, but it had been a very busy day)

Then had dinner, roast chicken, peas, small bit of stuffing, 6 new potatoes, plus 1 small glass of wine . Total carbs probably 40ish.

Reading 2 hours later - 6.7, 3 hours later 5.4. (After a 12 carb snack)

Obviously I am pleased with the levels, but I am just wondering if anyone else has this relative lack of post-prandial movement, and what, if anything, I can deduce from it?

I never bothered with the pre meal reading.

All that matters to me is <7.8 (or 8.5 if you prefer)

Your reads are looking great.
