There's something that I recently learned about my insulin sensitivity. Weightlifting does wonders for it, even if I only do a short session; on the other hand, cardio does almost nothing for my insulin sensitivity!
I know that everybody's different but if you're having problems with insulin sensitivity maybe consult your doctor about doing some resistance training.
