What are you having for lunch today?

I'm recently diagnosed Type 2 and still having difficulties choosing what to eat. Every meal seems to be a chore.

I'd usually have a sandwich or something on toast, or a jacket potato. But now, I'm still not sure what's best and still keep to a reasonable price.

So what are you going to eat today?

Hi Rob :)

Lunches can be a bit of a pain when starting out if you are used to eating what you described.

Do you test before and after to see what certain food does to your BS? - it sounds like you are clued up on controlling your carbs - I don't low carb but stick to around 30g per meal - my lunches usually consist of one of the following (all tried and tested meals eating to my meter)

2 slices of burgen bread with a filling of salad with either ham chicken or low fat cheese

2 slices of toasted burgen with a can of sardines

a BIG bowl of salad leaves with a couple of cherry toms, celery, cucumber - mixed with chicken or meat etc olive oil & balsamic vinegar

a two egg omelet with mushrooms and a bit of cheese

grilled mushrooms, bacon and egg - and a slice of burgen toasted (usually a Saurday this one!)

some homemade soup

very occasionally I will have a SMALL handful of cooked pasta mixed with loads of veggie/salad stuff and low fat cream cheese

I tend not to be adventurous with my lunches as they have to be quick to make and quick to eat - so I stick to what I know will be ok for me

It's all down to testing and knowing what you can tolerate as an individual - its a learning curve - try keeping a food diary for a while and recording what different food does to you personally.

hope I have helped a little - I always found lunches the most difficult at first too :D

I've just had a mushroom omelette with a slice of toasted burgen bread, and a pear for dessert. :D

I have had some chicken and veg soup, homemade and thickened with pearl barley.

I have had roast pork with a small portion of peas and carrots and a small roast potato.
Greek joghurt 2% fat for dessert.

I had two slices of buttered small white crusty bread with a sliced Vine Tomato, tea with S/S Milk. For afters I had a Banana (potassium). That's it now till dinner tonight. No snack's !

Cold chicken, cottage cheese with celery (trying to lose weight too) and a satsuma, washed down with diet pepsi.
Bo-oring! Must try some of this Burgen bread.....

got up late, as usual, and had brunch of 1 egg mushroom, cheese omlette, fried tomato, 1 toast and plain yoghurt with a few bluberries thrown in. & tea/milk

I dont have cereals anymore except maybe once or twice a month half a cup of oats added to some boiled milk

sometimes I'll include a dish of microwaved tomato/red pepper/onion/celery

occasionally a continental breakfast of cold cheese, ham, boiled egg, plain yoghurt + added berries.
