Lunches can be a bit of a pain when starting out if you are used to eating what you described.
Do you test before and after to see what certain food does to your BS? - it sounds like you are clued up on controlling your carbs - I don't low carb but stick to around 30g per meal - my lunches usually consist of one of the following (all tried and tested meals eating to my meter)
2 slices of burgen bread with a filling of salad with either ham chicken or low fat cheese
2 slices of toasted burgen with a can of sardines
a BIG bowl of salad leaves with a couple of cherry toms, celery, cucumber - mixed with chicken or meat etc olive oil & balsamic vinegar
a two egg omelet with mushrooms and a bit of cheese
grilled mushrooms, bacon and egg - and a slice of burgen toasted (usually a Saurday this one!)
some homemade soup
very occasionally I will have a SMALL handful of cooked pasta mixed with loads of veggie/salad stuff and low fat cream cheese
I tend not to be adventurous with my lunches as they have to be quick to make and quick to eat - so I stick to what I know will be ok for me
It's all down to testing and knowing what you can tolerate as an individual - its a learning curve - try keeping a food diary for a while and recording what different food does to you personally.
