What do you eat for lunch? Help

Since giving up bread, running out of options for lunch. I eat salads in the evening, what do you make for lunch?

Use a lettuce leaf instead of bread

I eat some avocado and protein. Often chicken tuna turkey or egg salad with mayo. No lettuce. Some above ground veggies as well

Not been doing this for long as I newly diagnosed.
I tend to take the same lunch to work most days which is a 3 bean salad with chicken, jalapeño, cucumber, tomato, pepper, onion, sugar snap peas, walnuts and almonds

Initially I was eating M&S nutty salads but gave them up for home made lunch.

However I do spoil myself sometimes with a pack of M&S mozzarella and sun dried tomatoes plus a pack of ham

Weekends it all depends on our plans.

Lidl protein rolls seem to be good - I can't eat any other sort of bread but they seem to be low enough not to cause spikes.

Depends on what I am doing. Thre is a microwave at work so I usually take soup or casserole in my soup jug and a packet of nuts to pick at during breaks. Yesterday I took buttered cabbage and sliced cooked bratwurst.
On the lottie it will be salad and/or omelette, sardines, cold meats
If we are out an eggy muffin or lidl protein roll packed with cheese, egg butter or tuna butter
at home whatever needs to be eaten, salad or soup. Lunch is the meal I can miss so sometimes it is just olives with a cup of tea.

Last night I looked in my fridge a realized I had a lot of vegtables that need to be used up. So I got out a large baking tray and cut up, tomatoes, onion, zucchini, garlic,olives, capers and peppers. Drizzled olive oil and roasted until yummy.
I mixed a third this morningwith raw greens from the garden and feta cheese.
That's my lunch. Tonight I'll heat some up in a omlette.

They are dark brown and triangular - and Lidl keep them in the open baskets where they keep the other rolls baked in store. They cost 25p and are very seeded. Lovely cut down the middle and toasted with butter.

Some times a couple of slices of ham with a hard boiled egg plus a little salad. And then yoghurt with berries mixed in.

Yesterday I had steak and salad, and strawberries for dessert. Day before was weetbix, banana and some chips (probably not a good choice if you're trying to cut down on carbs). I don't really have a fixed lunch menu, and often I will have meals around 10:30 and 2 instead of having a single meal for lunch.

If they've run out ask a Lidl person in or near the bakery if they're making more. They might even set a dozen aside for you, as they did for me once.

If you ask really nicely they will sell you them frozen unbaked (as long as you buy the full pack) but you have to pay the full price of 29p. They actually taste nicer when baked at home for 25 mins at Gas Mark 5.

I basically pack an antipasto plate into six small containers and take that with me each day for lunch. Cheese, pickles, ham, boiled eggs, strawberries and cream, salad, a bit of leftover veg from dinner, dip and vegies. I vary it a bit from week to week as there are endless variations. I catch a bus and two trains home, so I find it is ideal while I am waiting at the stations to just open a container and snack.
