What do you think of my first attempt?

Looks yummy, but why cooked in Vitalite? This is a heavily processed low fat spread. Much better cooked in real fat.
 
Looks great, but as others have said it would be even better cooked in real fats.
 
My understanding is virtually none, but a great balance of fat and protein.
My favourite is Doreen's. I phoned the company to ask about carbs. They told me approx 14g. I limit myself to around 20g, a little goes a long way.

I’m still transitioning from a really bad lifestyle and ignorance of the condition to a more focused well balanced diet so for me it’s still a learning process about portions and real fats in cooking etc.

Interesting. I’m guessing this particular brand has fillers. Perhaps most do?

You don't have to get everything right overnight. And while proper fats are "yay", we can't expect you to have them on hand right away as rarely anyone does have them around the house these days, after decades of being told they're bad.

Time-saver: before you go shopping, check nutritional value of your preferred brands online, and their alternatives. Otherwise one shopping trip can take 3 hours before you find everything you want. ;) There's black pud with virtually no fillers, there's pud with loads. It really pays off to check and maybe switch brands if need be.

I buy LIDL black pudding which is 11.7g carbs per 100g, but I usually only have 1, maybe 2 slices, for some flavour with fried or poached eggs.
I like the coarse texture. I keep some in the freezer.
