Deep-root vegetables can carry more carb [glucose] covert
Possibly look into other things to use as side dishes and meal options
My lettuce parcels are a great nibble and wont trigger neuropathy plus
keep BG levels lowered .
Lettuce leaves [washed] chuck in all your fave salad options .
Tomatoes,cucumber,peppers,celery,mushrooms,grated cheese,spring onion,
sliced boiled egg,wafer thin ham slices, drizzle your fave dressing on [balsamic,
french dressing etc]
Roll them up and enjoy!
A few of these on a small side plate looks like loads to enjoy too ...
