Morning all, hope all doing well. Lots of posts to catch up on. Been to Norway on a cruise in a slightly fruitless attempt to see the Northern lights.The weather was way too cloudy, did catch a very small glimpse on one evening, oh well will have to go again!
Was pretty good, diet wise whilst away,plenty of low carb choices. Was just towards the end when I was coming down with a cold that I succumbed to the evening hot chocolate bar and an afternoon tea scone. Did have lots of cream with both:)

Norway is a stunningly beautiful country and, given the right conditions, the aurora borealis is a spectacular nighttime phenomenon that is worth travelling to Norway to see. The current solar cycle is expected to peak between now and March 2026, so plenty of time to observe northern lights activity.

Breakfast was RyVita with ham. Expecting my cleaner to come so had lots to tidy up before her arrival, so little time for anything else. She's been and gone now so at least the house is clean again.

There will be a second meal today. I think I'll see what I can do about that beef curry I made a day or so ago. Neil bought 4 tins of coconut milk yesterday, so I'll use some of that and some lime juice and see where we go from there. Just the weather for curry today.

Dreadful night. Just a very busy head that didn't turn off till 6, alarm was at 07:30.

Bg was its usual mid 6s on waking

1 dance class but its gone from an hour to 90 minutes. A few nuts halfway through.

L: venison burger with mushrooms, small carrot a few courgette. A mini icecream

Have prepped a walnut and mushroom loaf ready for cooking tomorrow. A few walnuts got eaten.

Not sure yet if there will anything else today... I keep nodding off!

That made me chuckle @Annb. There's no way I could employ a cleaner, because I'd have to clean up as well as tidy up before they arrived!
Just wait until either your body or your mind prevents you from doing day to day chores without a little help.
If you ever find yourself with the choice between a cleaner or drowning in your own mess, please swallow that pride and go with the cleaner. It may give you room to have friends and family over without too much shame, preventing you from social isolation.

I'm very happy you have the luxury of choice, and hopefully it'll last forever!
I'm also speaking from experience, and I need my cleaner because of my mental health, no matter that I'm doing better this past year than I have in a very long time.

I woke up thinking about my post last night and didn't feel too good about it.
So a quick log in on my phone before my morning swim to try better.

You are always friendly, always thoughtfully and supportively replying to whatever happens in other peoples lives, and I should have thought of this before letting my Dutch directness out in an emotional reply.

Needing help, admitting you need help, can be very painful, and there's shame as well. Too many people keep surviving in a horrible mess because they're too ashamed to ask for help or let someone see the mess they made of their life.
Which is a bigger version of you having to clean before a cleaner would come.
I have been in that situation, a good friend constantly lives on the verge of it, I've seen it with my father.
So it hit home a bit too hard and you received a knee jerk reaction where a friendly explanation would have been so much better.

At the moment I need a cleaner to do the chores which require standing up for a period of time. She comes once a week to sweep, vacuum and wash floors, although she doesn't manage to fit it in every week and not always on the same day. She works full time as a Home Carer and we have to fit in between her shifts and her childcare (she is a single parent with 2 children and her ex-husband is little help there). Other things I should do myself, like tidying up, putting things away, dusting. I've worked out a new way of bed-making so that I can do that myself. As long as I can manage these things myself, even with difficulty, I will. Stubborn, that's me. And wanting to hold on to my independence for as long as possible. I do tend to leave things though, until I know she is due to come and then rush around putting things away so that we look reasonably well organised.

Couldn't be bothered to cook anything this morning, so just had ham and RyVita again. Must stop this - I'm eating too much processed meat. BG's high again despite what should be adequate insulin.

10:30 2 scrambled eggs
12:30 1 hot chicken thigh from the supermarket. Labelled as "Stout" the marinade was definitely beery and I wasn't sure what else so only the one.
Mid afternoon 2 proper ginger biscuits at sewing club.
18:00 walnut and mushroom loaf with broccoli and carrot. Made a sort of dressing out of humous, cream cheese and yoghurt with a few pinches of cumin and coriander.
1 sq lc chocolate cake with a very small spoonful coffe ice cream.

@LivingLightly, and anyone else interested who does similar recipe.

This time I just mixed all the ingredients raw and cooked it longer. Also usually I use about 200g mushrooms and 200g walnuts but this time halved this and still used 1 egg.
Seems a very amenable recipe.

Ingredients
  • 2 cups walnuts
  • 2 ½ cups mushrooms finely chopped
  • 3 cloves garlic peeled & chopped
  • 1 onion peeled & chopped
  • 1 cup almond flour
  • 1 egg, beaten optional
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 tablespoon Tamari sauce
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • In a large frying pan, heat the olive oil on a medium heat.
  • Add the chopped onion and garlic. Cook for 2-4 minutes until soft.
  • Add the mushrooms and cook for a further 8-10 minutes until cooked.
  • Chop the walnuts and add to the mushroom mixture. I like to keep the heat on to ensure a lightly toasted walnut.
  • Switch off the heat from the pan and add the herbs, almond flour, tamari sauce and season with the salt and pepper.
  • If you are using a beaten egg, add this too.
  • Stir well until the ingredients are combined.
  • Grease and line a 1lb loaf tin with parchment paper. Ensure the edges slightly overlap the tin for ease of removing the baked nut loaf.
  • Spoon the nut loaf mixture into the loaf tin and press down firmly.
  • Bake at 180C/350F degrees for 40-45 minutes until the nut loaf is golden and firm.
  • Rest for 10 minutes before turning out of the tin.
  • Slice, serve and enjoy!

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols. I like my measures much better in grams than in cups, which are a mystery to me still, so thank you!
I might give this a try for our Sinterklaas meal. :)

The apologies definitely were needed, no matter how graciously you took the matter. I chose my words harshly and regretted it, no matter that my feelings were valid.

Time to deflect and move onto lighter matters, I believe we're all good now. :)

I made the mistake of planning a meal needing to be cooked and eaten right away instead of a quick reheating. A phonecall got in the way and then it was too late to find the motivation to do so, so my main meal was a slice of LC bread, half with lots of a mild and creamy blue cheese, half with lots of paté.
Not enough, but then I found some gifts from my holiday. :joyful:

I absolutely love the flavour of the pork puffs, and a couple of the almonds were perfect to nudge up my bg a little when going close to hypo levels but not dropping fast.

I like my measures much better in grams than in cups, which are a mystery to me still, so thank you!
I might give this a try for our Sinterklaas meal. :)
I'll be giving it a try as well. I did buy cup measures to follow American recipes more easily, but still prefer lbs and ozs. Can manage grams though, thanks to my more modern digital scales. I still have 2 sets of old fashioned balance scales, both weighing in lbs and ozs but not many modern recipes are given that way any more.

Breakfast soon - another day I have to go out so must get on with it. Probably some more of the pasta from last night with some egg mixed through it.

That sounds good,I think I will give that a try with a flax egg substitute for my vegans
