"What have you eaten" Parallel Chat

Breakfast was the last of the pork belly and red cabbage.

2nd meal will be something of veggie origin. I have a lot of vegetables already chopped and ready to go but the only meat I have is a choice of nduja, bacon, chorizo or ham. I'll work something out.
 
Well done @Antje77, handling it on your own so soon.

I've decided to go with chorizo and some butter beans along with all the other veg.

Currently transposing my collection of paper recipes onto the pc - quite apart from all the recipe books I never look at, there are 4 box files full of recipes I've collected over the last 64 years and they are both heavy to manoevre and taking up too much space, so I'm sorting them out and copying the ones worth keeping. It's going to take me ages and I may run out of steam, but I'm going to try anyway. One is a red cabbage and beetroot ( :inpain: :arghh::dead::stop:) recipe, with sweetcorn. Might just replace the beetroot with apple and keep that one.
 
I've tried that sorting recipes tasks. Keep thinking there should be some tech or app to help, but everything I've found so far saves them to a proprietary database that runs the risk of the owning software developer going bust (like that 123 genetic data company).
And I've found I can remember the piece of paper the recipe is on, or the book it's in, far easier than digitally.
It's a bit like how I prefer and remember real physical books compared to how everything on a screen (kindle pc etc) just becomes one blur.
So I ended up sorting and culling the paper copies instead.
Was lovely afternoon of memories though. Mum's handwriting and Aunts and friends, and magazines long defunct.
 
B: 2 scrambled eggs
Very pleasant dog walk along the coast in the sunshine!!!

Lunch at a pub. Shared a seafood platter with hubby. He had the bread and fried calamari. I had the mussels and we shared kipper pate, crab pate, prawns and roll mop, and salad. Tea for me, beer for him.

Then another walk on a beach so dog could be off lead.

D: steak, mushrooms, green beans. 1 profiterole. 1 chocolate. 1 red wine

12,000 steps today.
Dog and hubby have both slept all the time since!:)
 
Departure from the bridge yesterday was rathe hasty because we found out I had the wrong door key and wouldn't be able to close bridge, and my trainer had to let through a ship at the last moment before closing time, so I forgot some things on the bridge. Mainly the information on who to call in case of calamity, pretty inportant once I'm on my own for real, and a hard boiled duck egg.
I wasn't sure if I left those on the bridge or lost it somewhere outside, in my car, in my house...
I had to be in the city of Leeuwarden anyway today to have my dentures repaired (nuts late last night, snap!) so I figured I'd have a look on the bridge afterwards.

Very funny, when I knocked on the door to meet my co-worker who mans the bridge on the days I don't work, he was on the phone with the next bridge along the channel, and I hear him say: "Oh, she's just coming in now." Turns out my trainer was manning the next bridge today, he saw me drive past and told his colleague!
Spent half an hour on the bridge on my day off, operated the bridge because why not, had coffee with my colleague, and then sheepishly asked him if he'd found a hard boiled egg because I was afraid it was somewhere in my car, creating a future problem.
He did find it, and was very relieved there hadn't been a duck inside the bridge. :hilarious: You can imagine his puzzlement when he found a duck egg on the floor!

Evening meal today was leftover stew, the rest is in the freezer to eat at work next week.
I'm sure you all know what stew in a bowl looks like so you'll get a picture of my office instead. :)

what a wonderful workplace! and it looks like it's already warm in the Netherlands. The trees are still leafless here
 
I went to the Dr yesterday and I have Diverticulitis and it's extremely painful. But while I was there, I asked for advice on the Diabetes. She has put me on a slow-release Metformin to see if that helps. When I told her that my levels were in the 8's atm but also went up sometimes to 11, she said it was fine!! although 11 wasn't really fine. My A1c is 57 and that's fine too. When I said that 48 was the ceiling really for A1c, she as good as said it didn't really matter so I was to stop worrying. I'm lost for words and I'm glad I listen more to the people on this forum than the Drs!! So thank you people of this forum, you are the ones who are helping me. :happy:

Just had RyVita and salmon pate. I reached into the small freezer and just grabbed the first thing there to defrost and eat, and that's what it turned out to be - the pate. So, the obvious thing was some RyVita to go with it..

Also found a small pack of lamb mince so will maybe make some lamb koftas this afternoon.

What a lovely place to work.
 
So far not the most interesting week foodwise for me. Still trying to figure out what foods are tolerated by my IBS. So i am sticking to the same foods during the workweek that I know can eat without a reaction. That is some nuts maybe some yoghurt and a rye-sourdough Sandwich for lunch. So dinners so far this week were baked chickenbreast stuffed with cheese and wrapped with bacon, a low carb cottage pie and a few chunks of cheese.
Today probably leek and mince soup for dinner.
Thursdays are not my favourite days as it is the long day at work and I can‘t leave before 6pm. So it is a very long day, I leave home at 6:30am and return at 7:20pm
But the weather is nice and sunny today

Added a pot of chickpea and mixed veg curry to the 2nd meal with probably too many koftas. BG dropped quite dramatically but is back up into the 8's now.
 
Hours Dog walk

No such thing as too many koftas!

Evening meal of cauliflower cheese and a pork chop, will have the same tomorrow. :hungry:

Wish me luck for the weekend, we have our yearly family weekend, and traditionally it's way worse bg-wise than even Christmas.
Usually worth it though with foods I don't eat as a rule but thoroughly enjoy, my take is that it likely won't cause me complications as a one off with my hba1c between 29 and 36 for years.
It might even go better than in previous years. The hotel is expensive, I hate hotels, there's a perfect empty parking lot in the forest at a 5 minute walk from the hotel, and I have a new car that fits a mattress.
Not being in the hotel at breakfast time but brewing a pot of coffee next to my car in the forest makes it a lot easier to ignore the breakfast buffet!
Although I may ask a family member to steal a croissant and one of those single portion butters for me, it is the family weekend where I traditionally make a mess of my diabetes after all...

Good luck, @Antje77! Have a good time and remember that one day off range is nothing to worry about.

By the way, @Annb, the cabbage and apples were delicious. I think I'll cook it sometimes instead of the usual recipe.
 
My son comes today!!! I can't wait. He isn't staying long but it will be nice just to have a hug. We facetime most days but it's not the same. But it's still something to be grateful for. I remember keeping a pile of pennies on the mantlepiece in case someone had to run up the street to the telephne box, so we've come an awful long way! :happy:
