The only things I would have had would be the chicken chow main & the beef dish, all the rest had batter.Paul59 They had just ordered the things we use to have.
I had to google "pikelet*
I thought it was a wee fish
potato salad = resistant carbs.
For a fair comparison, try them freshly cooked, and still hot.
Phase 2 of diabetes miracle is not going well.
I'm following the instructions to a T.
And my BG is annoyingly high.
Last night I had a great supper of mince stir fried with runner beans and mange touts, followed by 1 (10g carbs) pikelet thing. Toasted with butter and marmite.
YUM!
9.2 at 1 hr and 7.8 at 2 hours.
Bear in mind that for the whole of phase 1 I didn't rise above 7 at any time.
And I've only added an extra 5g carbs per meal
Not happy!
Today, I had a fasting BG of 8.5!!! (Usually around 6.5)
So today, I embarked on a series of investigations.
Breakfast, 10 g of wheat carbs = over 9 at 2 hrs
Elevenses, 10g of 70% choc = rise of less than 1
Lunch, 10 g wheat carbs = rise of 2.7
Snack 9bar = rise of 0.2
My lowest reading has been 6.1
Haven't seen a 5 since Sunday when I had my first 10g carb meal.
So, I think the main problem is the wheat. Will have to test other grains too. Seem to have MUCH better tolerance for carbs as choc, nuts and seeds, berries and similar.
This evening will be 10g potato carbs. Will report back.

@Brunneria
Maybe your body reacted to it that way because you haven't taken carbs for a long time?I noticed if I go extremely low carb for a day then eat a piece of fruit the next day, I'll see a big jump then the next day of having moderate carbs it won't be that big of a leap. If that makes sense? X

I shouldn't be reading this thread.
1 vanilla shake.
1 small apple.
1 tub of soup.
@Brunneria , maybe a wheat intolerance of some sort (?) yes better check out gluten too xYes, I think that may be a factor. @AndBreathe called it enzyme lag. Because it's actually the body getting out of the habit of producing the enzymes needed to cope with the carbs.
Last time we went on hol I experienced it, and noticed it took about 5 days to start improving.
I think what has surprised me is the dramatic difference between the wheat and anything else. I was expecting the lag, but Diane Cress specifically says that BG should remain within the target zone on phase 2. Mine doesn't when I eat wheat. And she's been right with everything else. So I think it is a peculiarity of me. Or wheat. I suppose I need to check out gluten v non gluten foods too.
@Debmcgee let us know how it goes w the metformin should your doc prescribe it xxI think I'd be the same. I'm def more sensitive to carbs now. I think that's why I failed the glucose test at hospital but had ok ha1c results
Doc is still convinced I'm t2 but I still think I'm borderline.
I'm seriously considering asking for metformin....may as well conserve whatever insulin I have left...
