L: Leftover butternut squash & beef mince bake
D: Cauliflower cheese with bacon, broccoli & cabbage (white sauce made with buckwheat flour)
The last one spiked me from 5.8 to 7.5 in two hours, drat it. Too much skim milk in the sauce I guess.
Hopefully today looks better:
Greek yogurt, handful of blueberries
Sausage, bacon (2), poached egg, tomato (eating out so went for the all day breakfast - hold the beans and toast and only 1 sausage please)
8 almond, 8 cashews (cinema snack)
Steak, pepper, tender stem broccoli, mushroom, mangetout
Water, water, water
One cup of tea, and sampled rooibus tea

Hi new to this site but can't believe how these threads have helped me. Was getting very upset this morning about what I can and cannot eat, driving my husband to distraction. Blood glucose levels up and down like a lift in a skyscraper at the moment and trying to work out what's doing it!!! Really interested and grateful for the ideas on the site. Please share the recipe for the white sauce. Thanks to all for the calming effect these ideas have had and I don't feel so abandoned, flailing around in the dark. The link to the cheese sauce recipe is posted above your post. It can also be used for making lasagne. Substitute the pasta for ribbons of courgettes. Mine always falls apart when I try to serve it, but the taste is all there. Really comforting in this cold weather.

No need to grill it or add nuts, just make the cheese sauce in a wide pan and beat it all together with a balloon whisk. Easy peasy.
For posh sauce, I use Wensleydale and Dijon mustard.
For less posh, I use cheddar, English mustard and a splash of malt vinegar.
Well.....I must be doing something wrong, tried twice and can't get them right! Either stay soggy or burn at the edge!! Think I may try on a rack instead of a baking tray? !Ooh....hadn't thought of that! Definitely going to try them later, need to go get some parmasen first! Saturday night treat I'm thinking. ....

I haven't had any advice yet and not on any meds, having a wait of a month for my first appointment at the surgery. The Pesto is 4.5% carbs of which 2.6 is sugars, I had a large teaspoon. Crisps were a bit of an error! But a small packet. The apple was probably medium sized.
I have taken it upon myself to purchase a meter and start testing, I was 13.6 in the morning (fasting - which is the same as my fasting test with the GP a week ago), it was 12.8 before bed and this morning 13.8?? Why did it go up over night?

Oh no! I was banking on them being a huge success....Yesterday:
B bacon and scrambled egg
L cheese and pickled onions (still my fad!)
D black farmers sausage mushrooms and coleslaw
Strawberries and cream
2 squares 70% dark with raspberry
Had two instead of one seeing as my intended courgette crisps failed!!

Chickpea flour pancakes (also known as gram flour )
These are delicious and filling, can be eaten hot or cold and for breakfast, lunch, dinner or snack. I like mine with salad and cottage cheese. Any leftovers make a great lunch next day.
Makes about 8 pancakes
1 1/2 cups chickpea flour
1/4 teaspoon baking powder
1 cup cold water
1/2 teaspoon salt or to taste
Pepper
1 teaspoon garam masala or any spices you fancy
Juice of 1/2 lemon (optional)
1/4 cup yogurt ( optional)
Add all the ingredients into a large bowl and whisk to make a pancake batter consistency. If it feels too thick, add a little more cold water.
This is optional but I like to add veg to the above batter...
Eg, finely chopped pepper, onion, spinach and grated cauliflower.
Heat 1 teaspoon of oil in a frying pan, keeping heat low - med.
Add 1 ladle of pancake mixture, fry on both sides until golden brown.
Enjoy
