What have you eaten today?

My God! I can't stand it! I suppose I cd eat this well if I planned it but there is always so much to do and I don't. Ohhhhh .....
Me too, until I get time... I'm often snacking all day on my flax bread - to which I added shelled hemp seeds, sesame seeds and ground pumpkin and sunflower seeds (1tbsp each) and cut down the butter/coconut oil to a large tsp from a tablespoon... I found the bread sizzled when I toasted it and the oil came to the surface.. not a bad thing at all, but I prefer to slather it in cold butter... I have never been very hungry till i became diabetic... odd, now I eat like a horse... fortunately I keep the weight off by low-carbing... I cannot believe I used to 'forget' to eat until, sometimes, 1.30 or 2 in the afternoon... how bizarre that seems now...
 
Oh dear... You did have a bad day... but you know what to do... forget it, move on - tomorrow is another day... and the day after that too, if you need it...

Ok, the highest in carb veg is: Water chestnuts (root veg!); Leeks; Onions; Carrots; Celeriac; Spaghetti squash; Pumpkin; Swede; Artichokes; Aubergine; Tomatoes; Snow peas/sugar snap; Spring Onions; Brussels sprouts; Zucchini; Courgettes?; Red/orange/yellow and green peppers; Broccoli; Cauliflower; Fennel; Green beans; Cucumber; Okra (hak!) Asparagus; Avocado; Cabbage.... Least is radishes and lettuces of course... You could put green beans in your curry of course too... good source of vit K apparently...

Had fish and chips from a different place than normal last week; still 8.5 after 3hrs......heavier batter, ate more of the chips and had beans instead of mushy peas.....so not reversed yet . It does show the value of continuing to test. Usual place 7.5 on average after 2.5 hrs so know I'm skating on thin ice there....but it's our weekly treat....if I come across any low carb foods/treats will let you know.
And thank you for being so lovely and nice about me being able to eat more carbs . Hope the time will come when you can too

For decades. Fighting a valiant rearguard action by trying for low carb, but I knew so little, that it wasn't really effective. But better than nothing...

I use coconut oil and coconut milk. Veg like courgettes, peppers, leeks - don't understand it. Used to use squash and root veg, boohoo, but that's out now. Oh sniff.
Check the carbs of the coconut milk. If I'm not mistaken they are fairly high? Could be wrong, memory isn't always as great as it could be and my books are indoors. If I wait until I am before replying I WILL forget, no doubt abt it

Coconut milk, as long as it's pukkah, is low carb... around 0.5 in 100ml... you don't need much to thicken a curry sauce and make it lush... I like it with chia.. I'm just going to make meringue... or not.....
 
So far, so good... it's in the oven... I used one lg egg white, whisked to soft peaks, and about 4 level desertspoons of Truvia, added one at a time... I didn't whisk as much as I usually would, as I was afraid of over-working it... might take a few goes to get it right... I may have an individual pavlova for tea tonight...

@Sable_Jan - Just checked it - it's still soft, not got a crust on it yet, and it's browning faster than normal... It could be marshmallow...

What do you eat the curry WITH? do you do cauli rice like lots of mention I hear on here? Or something a little "naughty"

look underneath the message box when you are replying or posting - its the green Upload A File button underneath. I kept trying the little picture icon thingy on the top row next to the smileys button then spotted this BIG green thing....
