The shepherds pie was really hot and took me about half an hour to eat. Do you test 2h after the first bite, somewhere in the middle or 2h after the last bite?

I really don't want to rain on your parade, because you are obviously going for this with enthusiasm, but my experience has been that skipping breakfast just makes my blood glucose rise steadily all morning, as my liver dumps glucose to compensate for the lack of breakfast.
I can stop that happening with a very small low carb snack, like a babybel, or teasp of peanut butter. Doesn't have to be a huge breakfast.
Do you have a meter? I'm not saying that your body will react the same as mine, but it might be worth checking it out...
They go nicely with baked cod or any other baked fish for that matter.....You can do mushy peas! Oh well, without fish & chips I suppose there's no point in wishing ...
It seems to work for me. I have a jelly pot for breakfast and although that is essentially flavoured water, it does have 1g or so of carb so there's something there.
I do have a meter but I've not used it in years. Do you think I might get a spike from a glucose dump?

Have you heard of dawn phenomenon? (Forgive me if I'm teaching a grandmother to suck eggs!)
It is when the blood glucose drops a bit during the night, and the liver releases glucose to 'top things up'.
The way to find out if it happens to you is to test at bedtime, and on waking.
If your BG has risen overnight, you are experiencing a liver dump (aka dawn phenomenon)
The liver can also dump glucose into the bloodstream at other times such as after heavy exercise, stress and similar.
There is nothing intrinsically wrong with experiencing a liver dump - but in my case, I get a significant dawn phenomenon, which i dislike, because it is large enough to affect my hba1c.
So I try and minimise it - by having a small snack first thing on waking (a Brazil nut, or a baby bel)
And following up with a protein breakfast.
If I didn't do that (especially if I missed breakfast) my DP liver dump would be inflating my BG from about 4am until my first food, whatever time that would be.
You may need xanthan gum with coconut flour to get it to hold together -Went to bed last night on 7.3 and woke at 10.0!
