For those of you that don't low carb but may choose your meals wisely, what meals suit you the best just curious ? and after some extra ideas, thank you xx

Hi Gemma
an omelette ( ham & cheese ) is my very best meal -- i still take a few ( 5u ) fast acting but my bloods just sit for the 4 hours post meal and don't go up or down

best evening meal is a grilled chicken breast ( flattened and seasoned with garlic and olive oil and pepper )
150 grams new potatoes and 100 grams each of steamed broccoli and cauliflower
( total carb = about 27grams )

i normally average about 80-120 grams CHO per day

Hi Gemma
I have just discovered that it is your little girl that has the diabetes.
I thought I would add a bit more in the way of thoughts and ideas that may help.

one of the most important things in any child's life is stability and routine.
this is true for all children -- not just diabetic kids.
Kids love routine -- ( my wife is an infant school teacher )

as your daughter is young I would imagine she wakes at about the same time and goes to bed at the same time and hopefully has meals at about the same time.
this does make things slightly easier with the D as the timings are roughly the same every day.
when i was diagnosed routine was everything -- but the insulin was not as flexible so eating had to adhere to the insulin

as for food the diet of a child is meant to be rich in things like whole milk for the calcium and fruit and veg for all the good they bring.

If your daughter likes particular foods ( my favourites as a child were soft boiled eggs and soldiers ) for breakfast
stick with the same thing as long as she likes them -- this will assist in keeping doses the same with insulin
and there is plenty of time in the future to vary diet as she grows older.

as a child all my evening meals were based around a piece of meat , some potato , and lots of green veg
( pasta didn't exist in my world back then ) ( or rice ) :)

currently another favourite is what i call vegetable rice -- lots of small pieces of cauliflower , carrot , courgette , onion , celery , etc etc stir fried along with some boiled rice and a bit of soy sauce.
easy to prepare and tastes really good -- is filling and the veg lessens the impact of the rice because of the volume it takes up in the dish.

i think that's all for now -- bit of a novel :D

Thank you so much, yes it is my daughter and you hit the nail on the head, food does have to adhere to the insulin.
Her routine has always been a strong factor in her life and still is and this is the only way we have some predictability so totally agree with you.
She loves eggs and soldiers but do find we get a late rise with them so possibly better injecting after them is my next step. But never tried the eggs in the morn so I can see how this would make sense.
Thanks for the cauliflower idea, do you ever make it into mash? If so how? X

quite excited here now to share this one -- you can put it raw into the food processor to make rice -- then just stir fry it as real rice.

making a lasagne using courgette as the pasta -- just use a vegetable peeler to cut long slices of courgette
then bolognaise sauce and bechemel as per normal lasagne

i have a lovely ( in my opinion ) recipe ( loosely speaking LOL ) of the following low carb potato dish

100 grams peeled new potato ( carbs 15.5 per 100 gram )
100 grams cauliflower ( 2.2 carbs per 100 )
50 grams onion ( 3.7 carbs per 100 )
100 grams celeriac ( 1.9 carbs per 100 )

just boil potatoes as per normal -- steam all the rest ( cut into smallish pieces )

then put all cooked ingredients into potato pan -- mash together -- bit of butter salt and pepper

deliciously tasty and works out as about 6.5 carbs per 100 grams served

I have to try this for myself also aswell as my little one. Thank you for sharing will let u know when I have mastered this one xxx

Anything of low GI like lentils, beans, quinoa and potatoes seems not be bad for me. Also pot barley I cook as risotto.

When I was a kid growing up as type 1 in the mid 60's, my daily carbohydrate allowance for the whole day was just 50g of carb. My poor Mum did her best to cook me food that wasnt high in carb and regularly cooked cauliflower to take the place of potatoes for my eve meal. I got very thin as I just wasnt eating enough food and was also down in the dumps and withdrawn. I eventually got my insulin dose increased so that I could eat more food and became a lot happier and looked like a normal weight person. Its important to not eat too much food that causes weughtgain as it is to not eat enough resulting in too much weight loss. Everythingin sensible moderation is key to living a good life. A good tip about potatoes is to peel and cut them in half and then let them soak in a saucepan of cold water for about 12hrs which should then make the starch float to the top so that it can be poured down the sink and the potatoes rinsed a few times before cooking. My mum always did this. Most of the green vegetables are good for bg control and cauliflower florets can take the place of potatoe and if the 2 are mashed up together youve got a nice healthy meal for children and adults.
