What on Earth can I eat?

Dear Group members -- Greetings to all of you. I have Hashimoto's thyroiditis and celiac disease. I was recently diagnosed with reactive hypoglycemia, based on a glucose tolerance test. But I have had reactive hypoglycemia symptoms for possibly 12 years. Since 2018, my weight has gone down more than 10 kg (22 pounds), and I currently weigh 38.5 kg (85 pounds). I'm looking for a minimum 2,000-calorie meal plan divided into eight small meals. Do you have any meal plans, tips, or ideas that you could share with me? Welcome to our forum.
First of all, why the eight meal plan? This is an old idea from the medical books, where you eat what you like but have something to eat every three hours to stop the hypos. But it doesn't work! I know I have tried it, and if you are busy and don't eat, the hypo is worse. And what about overnight?

The only me so plan that has worked for me, is intermittent fasting and a couple of very low of zero carb meals in a five hour window, and not eating four hours before bed, so I know I'm not going to go hypo!
Going low carb is to prevent the spikes in blood glucose levels that trigger the reaction that trigger the excess insulin, that causes the hypos.
If you want particular meal plans, then dietdoctor.com or the forums low carb or keto forum diet ideas and recipes. I eat to a balance that is tailored for me.
You may want to discover which foods you can tolerate to suit your needs, mainly because of your requirements to help with your other conditions.
I used a food diary using a glucometer, to test around meals, to see if I spiked too high. I found many foods that I couldn't tolerate carbs or sugars. Anything that spike above a certain level will cause the reaction. So now I avoid them.
Did you have a two hours or an extended oral glucose tolerance test?
My health is better for eating this way. I often refer RH as being carb intolerant. So like, I have had lactose intolerance since very young, and I was advised to not have dairy. So why if you have a carb intolerance, why eat carbs?
Doh!
Keep asking and hope you can sort your meals out.
