Could you tell me what you use to thicken curries or stew as cornflour/ flour has a lot of carbs?

Check out arrowroot, or xanathan gum (not sure of spelling of last)
I do still use cornflour for gravy on the basis it's a very small amount for several portions.

Always worth testing your own bg to see how it reacts.

Goodness you must want it v thick if you are concerned about corn flour as i only use a teaspoon full when making gravy.
Half a gelatin sheet is a possibility as it can help settle a troubled stomach too.
Digressing but i once made a bone broth and boiled a pan full of bones for 12 hours.....
A gelatin sheet in a soup in 20 minutes had the same effect lol.

I don't thicken soup/gravy/stock any more. I got used to the new normal very quickly. Worth a try to see if it works for you. Or you could liquidise some vegetables.

I second arrowroot. But you could also try Glucomannan powder which is natural and made from Konjak
xantham gum is made from a bacteria through a process of fermentation. It’s pretty safe but I avoid it.

I grind dried wood ear mushrooms to a fine powder in a spice grinder. This absorbs several times its own weight in water. You can find them in Chinese grocers. Other dried mushrooms would work, but this seems to be the one that absorbs most water.
