What have you eaten today? (Low carb forum)

looks yummy. how do you cook your steak? i can never get it tender so I've given up trying to cook it. but I would love to be able to do it properly and enjoy it.
I used to cook it on a high heat in a steel pan, but despite opening the windows, the smoke used to get a bit overpowering. I now use an air fryer: 230‭⁰C for 6 minutes and let it rest for 10 minutes.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: gammon steak with mixed salad.
HbA1c 30! So happy, full update to follow when I’ve had my review. :)

Skipped lunch.

Great news on your HbA1c @Rachox well done!
Today I had Greek yoghurt with walnuts and pumpkin seeds for breakfast.
Lunch was 2 h/m scotch eggs and 2 cornichons.
Dinner: chilli using Edemame beans instead of kidney beans. Holland &Barrett zero carb rice ( made of organic konjac flour and organic oat fibre). 1 DGF peanut butter mini egg to follow.

Breakfast kefir then two poached eggs on low carb toast
Lunch left over frittata
Dinner left over roast chicken with a large salad. Then had a low carb home made chocolate brownie.
My rhubarb crop is good this year so I have plans to make the upside down rhubarb and ginger cake using Panda flour. All my low carb baking to date using Panda flour and their recipes have worked well for me so I'm crossing fingers - if it works will post photo.
 
We had a meeting in the office today, and they passed around some small millionaire shortbread type things. And I had one, automatically and without thinking.

Anyway, for tea tonight I defrosted a home made chicken & mushroom jalfrezi and had it with cauliflower rice with finely-chopped mushrooms and onions fried in butter. The cauliflower rice was lovely.

The H&B rice was interesting! It doesn’t really taste of anything. It had that offputting fishy smell when the packet is first opened but that is soon rinsed away. When I tried the first forkful on its own I wasn’t keen on the texture but when I ate it with the chilli it was fine and I think I’ll probably buy it again. (It was half price when I bought this which helped)
 
I poached some of my rhubarb in my slow cooker yesterday evening with lemon and ginger and let it cool and infuse overnight. The low carb upside down rhubarb and ginger cake panda flour recipe cooks the rhubarb in the oven but I decided to use this softened rhubarb instead. It worked well - first photo is the cake side and second photo the upside down rhubarb side cut into portions ready for freezing - just a few pieces kept in fridge.

Lunch last piece of left over frittata with celery and small tomato followed by a couple of strawberries with yoghurt.

Sea bream with local asparagus - only found the standard green variety this week

Pudding was a piece of the low carb rhubarb and ginger cake with cream - it's delicious, I love rhubarb and ginger together.

The rhubarb upside down cake looks great @shelley262 I love ginger with rhubarb too. I’m hoping my neighbour will give me some of hers again this year.
No breakfast ( except kefir) as Wednesday is Aquafit morning.
Lunch of cheese omelette with turmeric and ginger sauerkraut, followed by DGF raspberry Bakewell and clotted cream.
Dinner was chicken thighs I’d marinated in yoghurt and spices, then roast with harissa coated veg and served with a DGF garlic and herb wrap.
Small glass dry white wine while sitting in the evening sun.

More low carb baking today - I'm restocking the freezer with portions of home made low carb bakes. Chocolate brownies today using Panda Flour and it also has chocolate chips using a chopped up bar of 100% Montezuma' s chocolate. First photo just out of oven second photo cut into portions and ready to freeze.

Breakfast kefir then fried a few tomatoes in olive oil and served with a poached egg and one slice of LC toast
Lunch cheese and celery followed by a portion of my new chocolate chip cake - well it had to be tasted! Rest in freezer.
Dinner I cooked some braising steak in the slow cooker with beef stock and carrots served with more local asparagus ( it's a short season) followed by the last frozen portion of my hm lc lemon cake - planning to make and stock up freezer with the lemon one on Saturday.
