Hi, hoping experienced followers of LC diet can help me with this one. I've got a lentil and walnut loaf I really enjoy, but one of the ingredients is breadcrumbs. What would be a good substitute for breadcrumbs in that sort of recipe?

I'm not aiming for very low carb, just for a significant drop from my current carb intake, and I don't think the breadcrumbs really add to the flavour any - think they are they for binding purposes, or to make it a bit bigger. All suggestions welcome :)

it sounds like it's to soak up excess liquid or bulk? does it have an egg?
almond meal, desiccated coconut, flax/linseed flour [if you like it] soy and chickpea flour

Not sure, but would really like the recipe please! :D I would probably make some lc psyllium husk bread then blitz it. It soaks up a lot of moisture so other ingredients may need adjusting.

I make a lentil and mushroom loaf and have bulked it out with courgettes to reduce carbs. It is bound with cheese and egg.

Our big Christmas nut roast will probably be out this year as it is full of parsnips and breadcrumbs :( Your lentil and walnut sounds like a good alternative.

Thanks for the suggestions, I think it's probably to soak up excess liquid too (it has egg in it for binding).

Avocado Sevenfold, I'll get the recipe for you when home - it's in an ancient book my mum bought back in the 90s when vegetarian wasn't that common!

purplekat I would like the recipe as well please! And yours too avocado!

Maybe not for a loaf, but grated Parmesan makes a fine crumb coating.

I've got a chicken breast recipe that is just chicken covered in Parmesan, paprika, powdered or finely sliced garlic and... Thyme or Italian herbs, I think.

Then bake.

Gorgeous.
