Tender, sourced direct from the farm, butchered before our eyes but confirmed that shoulder is all I want of lamb. Hopefully, 36 hr sous vide brisket will not be the final straw for that cut but at least I will know it is neither the provenance nor the cooking method that is the problem. Trying hard to eliminate possible reasons I have developed a dislike of much meat then stick to the cuts and cooking methods I now tolerate.
