[QUOTE="Muddy Cyclist, post: 2369550, member: 505893"] It is very much a tomato based sauce but I do cut down on the amount of tomatos and purée. 3 shallots, cherry tomatoes in quarters , tomato passata, black olives chopped, capers, garlic, olive oil, chilli flakes, red peppers, mushrooms, 1/4 cup red wine, juice of half a lemon, black pepper, salt, fresh basil. Sweat shallots, add everything else other than wine, lemon juice and basil, cook until done, season Tuna with black pepper and salt make space in pan for Tuna Steaks cook both sides. Remove tuna, add wine and basil to sauce and cook for a bit, put Tuna back in and add lemon juice, cover tuna with sauce and serve. Good with a chunk of Skinny Bread. I find that my BG reading before evening meals is under 5 as a rule, 2 hours after this meal it seldom goes higher than 5.5 and that's having cheese and 3 biscuits after meal, so works for me and all that taste.
