Sitting here with dry chicken  ... I used to use blackbean sauce and the like but worry now that it will be full of hidden sugar so anyone got any ideas?

Nothing worse than dry chicken!

If it is chinese style you like try chopping up some garlic and ginger finely. Add fresh lemon juice, a small amount of soya sauce and some chopped fresh chilli and marinate the chicken for an hour. Stir fry the whole lot together. If you dont have time to marinate it don't worry - just put it all in the wok at the same time.

I also make a nice sauce by frying some mushrooms in butter, adding a small amount of chicken stock, fresh double cream and chopped parsley. Season to taste. For a variation add some boursin or garlic roule into the cream and let it melt. This is also great on steaks!

have fun trying.

The mushroom sauce sounds yummy truffle - will try that :D

I have a yeast intollerance so cant drink wine but my husband says it tastes even better when I put wine or brandy in the cream sauce! Also goes with prawns, spinach and asparagus.... infact even on its own on a spoon! :D

Thanks for the suggestions they do sound lovely. I was looking at the stir fry sauces in asda earlier and they all have sugar but it's healthy because it's brown sugar
