When does testing after a meal become before?

Surely time must play a part in testing if you time 2 hours from the beginning of the meal ie... if I test at the start of my meal say at 6 pm and I take 15 minutes to eat it then when I test at 8pm it will be actually be 15 minutes short of the 2 hours or do I add the 15 minutes it took to eat the meal making the test 8.15pm. If I start the meal at 6pm and take 30 minute to eat it then the test at 8pm will only be 1 hour 30 minutes from the start of the meal which could make a big difference in BG levels to a full 2 hour testing This is I think is why the 2 hour testing confuses some of us
 
Saliva contains enzymes that start to break down your food in your mouth this triggers the the rest of the digestive system.

That is why from first bite except to a large degree for me as I no longer have most of my saliva glands so do not produce saliva much.
I don't see that saliva triggering the digestive system is relevant. The pancreas will only produce insulin to try to regulate blood glucose when the blood glucose has risen, and to do that the glucose from the food must have started to be passed to the bloodstream via the intestine which takes time. The pancreas in a non diabetic does not use the same method as T1 diabetics do with injecting insulin in anticipation of the meal they are about to have.The pancreas does not do carb counting, it is a continuous regulation process. So if T2D's are carrying out testing after a meal to see if the amount of carbohydrate they have eaten is not to much for their impaired system to cope with and their BS level has returned to an acceptable level then they must have eaten and digested all the food first. It may not be the "official" method but I think timing from the end of the meal is a better test.

Why not try doing both for a while and see what difference there is?
To be honest I am not too concerned about my own readings, I just get a bit animated about things I see as illogical, maybe I should change my alias to Mr Spock. I eat quickly, so start and end of a meal are usually only about 10-15mins apart. My main reason for testing is to find the effects of various foods, so if I have a non standard long drawn out meal that probably not the time to do a test anyway.
