As your prediabetic, it is recommended that you test around your meals. Pre meal and two hours after first bite.
The reason behind this is to find the foods that spike you consistently high. Your BG levels should not be over two mmols higher than your pre meal reading, otherwise, there is something in that meal, that is prolonging your high spike.
Keeping a food diary alongside is recommended as well, with your readings and portions of each food, exercise, meds. Or anything else relevant.
I hope you mean two hours after first bite. Not straight after your first bite!
