The wheat we eat now looks nothing like it used to, and as he states wheat has been modified a lot over the years, our ancestors wouldn't recognise it as wheat.

Yep I too cant deal with wheat or gluten
Bloat and blow up big time/style , also suffer spasmodic cramps which are agony :thumbdown:
Sweat and feel nauseaus with extreme discomfort for days!
Either way end up unable to digest or am never off the loo for days ...
It will/can take up to 4 days for things to begin to settle down after an attack too .
I can tolerate a few sunflower flax seeds however :crazy: I know its a strange thing!
I just eat more veggies to compensate and they are far better for my BG levels too.
To even risk/attempt eating bread soooo isn't worth it for 'me' .
I suffer with too much pain and discomfort to do so .
I also have a vitamin D deficiency - hypothyroidism too [underactive thyroid]
Have often wondered 'if' there is any linkwith this ? :think:
As they can affect the metabolic and digestive systems .

I am - just as you describe above - I sympathsise with you completely .
Took me 3 weeks to get over one attack .
Thing is - I tested only once positive for coeliac then the next 2 tests they did were negative .
So they then said I wasn't coeliac .
Wheat,gluten,oats are like cement in my system its terrible :thumbdown:
Seeds and pips get stuck in my diverticulitis pockets and can cause flare ups .
I do find the drug mebeverine/colofac taken with cocodamol pain relief helps with my flare ups .
Though if get infections I do need a full course of antibiotics .
