Why blood sugars start to rise after 2 hour check ?

Hi im new to this and was just trying to see if anyone can help from their own experiences i have a teenage son who has just turned 13 and was diagnosed in october with type 1 he has freestyle libre and does blood test after eating he does his 2 hour check which seems ok in target but straight after he starts to rise to double numbers between 11-14 this happens after lunch and dinner so ive started to increase his ratios on those meals is this right? Why are they rising ?what can i do ? He was on lantus but moved over to tresbia and takes novarapid .

Not all carbs/foods get digested at the same rate, also the combination of different foods can make a big difference in how long it takes for the sugar to hit the bloodstream. Fat for example slows down the digestion of carbs that's why pizza can be difficult to cope with (Google the pizza effect for a better explanation)
The 2 hour mark is just a rough guide. A food diary might be useful in determining which meals/foods are giving him a problem.
