The asparagus season is here ! What better than lightly poached with lashings of melted butter - low in virtually everything but extremely scrummy !
Sorry Chook, but you have just turned me off with that mix.One of my favourite breakfasts is slender asparagus stalks dipped in a soft boiled egg instead of buttered soldiers.

I cannot tolerate soft boiled eggs after being served one that did not spend a great deal of time in boiling water, runny yolks yes, runny whites is a definite no no.

Easy blender hollandaise
1 stick unsalted butter
2 egg yolks
1 T fresh squeezed orange juice and some zest
Salt and cayenne to taste (1/8 t cayenne)
Melt butter. Pulse yolks juice, zest and slices in blender
SLOWLY drizzle butter into blender with blender running. Blend until consistency is like lightly whipped cream
Serve immediately. Excellent on asp, salmon, chicken and jus twitch a spoon lol.
If you try it let me know how it goes! I think it can be refrigerated and then reheated or you can make half batch of course
