Zombie Apocalypse

So how would a type1 survive some kind of apocalypse event, so mad max, zombie, etc
how would you be able to get the much needed insulin?
i dont know how i would be able to create human insluin, i was told i could turn plant leaves into insulin producing cells, but cant find the info on this.
anyone how to solve this thought puzzle, with actual science that anyone could do?
