The basic recipe is:
80g full fat cream cheese,
3 eggs,
half teaspoon baking powder
a teaspoon of psyllium husk
all whizzed together (I use a stick blender) and let it rest for 5-15 mins before frying in coconut oil or butter (or both). It makes three pancakes
For lemon pancakes its the basic recipe above but I add the grated zest of half a lemon and a few drops of vanilla essence
Then, when the pancakes are cooked, sprinkle with lemon juice and sweetener to taste.
You can use the basic recipe to make all kinds of different flavours - lime and coconut, chocolate, cinnamon, plain vanilla with blueberries, or add a savoury filling. .
