I have just made some sugar free lemon curd that used 6 egg yolks. I now have 6 egg whites sitting in a bowl and am looking for ideas as to what to do with them. I have tried making meringues before using sweetener which was a disaster - they stuck to the baking paper and were really spongy. Anyone got any suggestions?!

I didn't know this until reading about it the other-day, but apparently you can freeze eggs if you don't want to use them straight away @Mongolia

Low carb meringues unfortunately doesn't work :( Try macaroons http://www.diabeticgoodbaking.com/2013/07/ihave-become-bit-obsessed-about-coconut.html
or you could try angel cake replacing flour and sugar. Ive never done it before but it should work

Thanks for this @ewelina. What flour would you suggest as a replacement for the angel food cake? A mix of soya and almond? I also have peanut, sesame and coconut knocking about in the cupboard! Never tried macaroons either.

I would use almond and small amount of any other flour. If you make angel cake please let me know how it works :)

Delia Smith has a fab choc roll recipe. You split the eggs. Yolks go into melted choc to make a rich heavy intense choc sauce. Whites go into sponge with cocoa. No flour.

It is heavenly.

Obviously you are down some yolks, but the sponge idea is pretty adaptable... And v easy to sub the sugar...
