Was this a Hypo?

Could it be IBS or colic? That can cause sweating and pain.

Could it be IBS

I thought it could be IBS but I have none of the other symptoms besides the pain. My pain is directly under where the ribs end in the centre and goes off to the sides. I have no idea what it is, I don't even have to eat anything for it to happen

Some kind of muscle or ligament problem? It might be worth ruling that as well as other gastric issues like heartburn (which is much more painful than it sounds) and stomach problems.

I know it's frustrating when you have a problem and you can't seem to get any answers. I think it's just a case of ruling things out, and maybe keeping a diary of when the pain strikes and see if that gives you any clues to what's causing it (eg meals, sitting too long, sleeping on side, exercise, etc).

I have mulitple GI diagnoses and it is hard to tell which is which at times. You're best to speak to your doc and get a proper check up on it. I've had multiple scopes done over the years and each one they find something else new. But in regard to pain just under your rib..... I do get that a lot but for me it is because I have a sliding hiatal hernia that slides through the sphincter located in my diaphragm wall. That often triggers diaphragm spasms on me. I'm not talking about hiccups either... although I do get hiccups at times.... I'm talking about spasms where they can get so bad it hurts to breath and I don't know what to do with myself. I'm often grabbing at my left under my rib cage trying to rub it and ease it. It happened once in front of a doctor and they examined what was happening and explained my diaphragm wall was spasming as it's a muscle too. So it could be that for you... but then it could be a lot of other things as well. I also have IBS and that causes a fair bit of pain. I have GORD and that causes a fair bit of pain. I have motility problems where I get big spasms that lock up from my throat down to my bowel and that is severe pain. But spasms pretty much happen for me on a regular basis. It's definitely worth it for you to get investigated. I wish you the best. :)
