Coconut Bread recipe

Looks nice and simple :)

If you do carb count it and/or bake it, let us know what it's like :)

Didn't do it - to be honest was a bit confused about carb content for flour as it seemed to be high carb not low carb - though people do use coconut flour for baking low carb - not really much of a baker now - got your pm by the way - no offence taken - I'm a Cumbrian lass so being near neighbours you will know how thick skinned I am lol
 
How about that?! I am a southern softie (Winchester) that moved up 14 years ago - still considered a white settler in these parts. But Jane is from Carlisle (we all have our crosses to bear).

I will see if I can remember to get some flour, it is quite expensive, but if it works it could be good. If I remember and if we do it, I will post results, but don't hold your breath!
 
I've seen some highish carb coconut flour too, but perhaps look into Sukrin's reduced (but still highish fat!) which is 9g carbs/sugar per 100g. They have a UK website, and you can also buy it from Amazon, Avidlite, or Ocado that i know of.

I've not actually tried this brand because I tend not to bake with coconut flour on its own as I've never had much success - but have found it OK if mixed in smallish quantities with my preferred ground almonds or sesame flour. It's very absorbent but apparently needs less liquid than more to get the correct consistency which I find too weird to get my head around! :wideyed::wideyed:
