Potatoes !!!!

It never ceases to amaze me how different we all are. :)
Potatoes aren't great for me, but they are FAR better than any of the grains. Those spike me to the skies, while potatoes are kind of doable, in small portions
Yeah, it's really strange! I'm the complete opposite and can eat brown rice, brown pasta, wholegrain bread and even breakfast cereals in moderation and barely even register them

I'm assuming the skins have low carb and high goodness??
Nope but they are good blotting paper, and the fat they absorb helps slow down digestion. Also they are the tasty bit of a roastie. Some say they hold some vitamins and fibre that mashed pots seem to lack.

Would boiling the potatoes first, before roasting them help? I seem to remember people on here saying that if potatoes are re-cooked they don't spike bs so much. Also new potatoes are supposed to spike bs less and can be roasted - the bigger ones are better for that and I roast them unpeeled.
I'm ok with potatoes and do have roasties with a Sunday lunch, but only about once a month.

Baby new potatoes are 15g carbs per 100g, 100g equates to around 3 or 4 small ones. that's not too bad alongside pasta or rice which are much higher.
Agree that everyone is different in how they can handle them.

I put baby new potatoes, baby carrots and quartered onions topped with olive oil into a meat roast last week- I did not get much of a spike at 1 hour or 2 hour after eating 6 of them but did experience the prolonged slightly higher levels of BG that brunneria describes in her post probably because of the fat content.

Apparently in Australia they have bred a Low Carb potato. It has not yet crossed the oceans of the world, and remains an aussie pot, not a pommie pot.

We buy Spud Lite low carb potatoes from Woolies, you can boil them, mash them, stick them in a stew. Lovely big golden chips with a nice piece of fried fish. Roasted in goose grease to.

They have < 9 grams carbs per 100 grams, which have helped me a lot. :D

Sorry, but here in the UK not only do we not get Spud Lite, but also we no longer have a Woolies

I am also someone where a moderate amount of potatoes has no significant effect. Not that partial to most types now really having got out of the habit, but indulge in a couple of smallish roast spuds every now and again. If someone had told me years back I'd be considering these a great treat I'd never have believed them.

The Woolworths (Woolies) we have here is nothing to do with the UK's F.W. Woolworth's.

It was a Australian owned company which now has South African owners I believe.

Yeh I've tried them and they're disgusting... just my opinion. I'd rather a normal potato you can do things with. I haven't seen them being sold here for a while now either... probably because no one was buying them. I brought them a few times and gave up... you can't do much with them and no matter what I thought I was eating cardboard or something... bad flavour.

We like them as they taste the same to us, but our's are mostly nuked in the microwave or mashed.

They sure beat mashed cauliflower... :meh:

I actually saw those spuds in woolies yerterday and was tempted to try them, but because I am just starting out on the low carb journey, I think abstinence is better for me at the moment. I am enjoying trying new recipes such as cauliflower fried rice and eating all those fats such as butter, that I have been brain washed into believing was the reason I was overweight.

Terry I love your posts they are a reflection of my tortured self, still searching for the miracle that everything stays the same with different results (definition of madness ?)

I'm type 2 with no medication. How far do I need to run after (or before) lunch to burn off each roast potato?

Oooh! how long is a piece of string? :)
Unfortunately, we are all different, with different reactions to potato, different fitness levels, and different sized potatoes... so it would really need you doing some testing with a home meter , so you can work out your personal tolerances.

Sorry I can't be more specific, but it really does vary hugely from person to person.

Fair enough. Thanks for comment. My question was a bit tongue in cheek. While everyone else is slumped in an armchair I'll go for a brisk walk.

I can eat roast potatoes, and I love them cooked in goose fat. I can have about 2 medium ones.

But I cant eat pasta, or rice, and very little flour. The best bit of advice I have had from here is to eat and test, as we are all different.

Potatoes roasted in goose fat may be OK. I eat chips (very) occasionally and usually get a late spike.

I am definitely having some roasties on Christmas Day.
