Vegetarians: What have you eaten today?

Hi friends ..
Lovely sambar curry with coconut and okra veggies , little rice ..
Might go for an ice cream later ..

I have really got to get back into better and more interesting cooking in the new year ..
I seem to go for the simple options .
Same menus ..
 
Thanks @Kat100 -still hospitalised, but now in a ward with the dialysis patients (not sure why), but they're on special diets, so we all get "home cooked" food rather than the mass produced stuff, so it's not as bad.

Yesterday:

B: Rice Krispies & toast.

L: Veg pie, mash & carrots. Cherry pie with custard.

D: Cheese omelette with roast veg. Yoghurt.

Numerous snacks: Nuts, hula hoops, club & kit kat biscuits to boost calorie intake.

Won't have anything to report today as nil by mouth for a procedure.

I am still thinking about my Christmas Day triffle lol
Today same menu as yesterday not to exciting ..

Next year must be more inspiring menus from me ..
 
Actually I have just left some raspberries and jelly to set ..
Fridge tonight , will add cream tomorrow..
Not a big triffle but enough .. x

Chocolate fridge cake I will make on Friday ...
Goodness getting festive now

Procedure cancelled, so I was nil by mouth for a few hours and had a late breakfast at 10:30 (could have been worse) and they'll try again tomorrow.

B: Weetabix & toast.

L: Mac n cheese, mash, carrots & sweetcorn. Ginger cake & custard (carb overload!)

D: Tomato soup & bread roll. Veg tart, chips & peas. A chocolate mousse (not too naughty, but very nice!). It may seem a lot, but nowhere near the lunch time carbs.

Snacks: Nuts & hula hoops. (I'll need a pre-midnight snack before the next nil by mouth kicks in.)

L: Little higgidy pie & salad

D: Squash stuffed with walnuts & cranberries, roast potatoes & veg. Chocolate orange tart. (In honour of visiting newlyweds!)

L: Cheese & mushroom omelette with salad. Christmas cake.

D: Squash stuffed with spelt, roast potatoes, sprouts & cabbage. More Christmas cake. I made some more mulled non-wine too.

It was going to be quiet, but my eldest daughter and family came over a day early to beat the bad weather, so it's nice to have a house full (including a giggling two year old (the flower girl)). It'll be busier still tomorrow, when the newlyweds join us ready for the New Year.

Yes, it's been a tough couple of years and they've all helped me get through it (and suffered with me). It's good to enjoy Christmas together.
 
Santa brought us five cookbooks! :D I tried this recipe last night from one of them and it was very tasty (it doesn't tasty coconutty). The book version uses 1/4 tsp of Dijon mustard instead of nutritional yeast. I will make it again tonight http://www.ainecarlin.com/?p=5474
